This is from the Yom Kippur prayers and it is talking about G-d judging us and deciding our fate for the next year. Ki hineh kachomer biyad hayotzer - because we are like the clay in the hands of the sculptor - kein ananchnu biyadcha - so we are in your hands. Labris habeyt - look to the covenant (that you made with the Jewish people) and don't turn to the yetzer - the will to enact judgement.
Each verse contains a different comparison but the idea is that we are in G-d's hands during this time of judgment and we hope He will accept our prayers and repentance.

Hi I just watched you listening to Shulem Lemmer for the first time. His voice is like a fine instrument that he can use in ;many ways. If you like him singing cantorial music you must hear him sing Lo Sachmod with his brother Yanky Lemmer, an equally talented singer who is a tenor. Watching you enjoy this beautiful singing gives me great joy. I feel as though I am sharing someting I love with a friend. Your respectfulness of our way of life is greatly appreciated by the Jewish crowd who are your subscribers and in a way also your friends.

The point of the esrog isn't to eat it (although after sukkos some do). The esrog (citrus) along with three other species: the lulav (palm), hadassim (myrtle) and aravos (willow) are taken and used to perform a ritual during the prayers on sukkos. Shulem is a highly regarded chazzan in the Jewish world (a chazzan/cantor performs opera style singing and often leads prayers in shul/synagogue) although he sings regular songs too. And though I can't be sure I'd guess this was either a fundraiser or parlor meeting/dinner of some kind.

The lyrics mean come from the end of the first prayer service on Yom Kippur, the Jewish Day of Atonement - a rather intense time.
    They mean:
_For like clay in the hands of a molder -_
_At his will he expands it, and at his will he contracts it -_
_So are we in Your hands,_
    _He Who preserves kindness..._
_Look to the Covenant, and don't turn to the Accuser._

Check out his version of "A Man From Vilna" which he sings with his brother. It is an amazing song, mostly in English with an amazing (true) story-line.
