Because they are predominantly solo games, just with a bonus feature of summoning help. Who said they need to be coop in the first place? Dark souls 1 is a very good example where coop ruins the whole experience for a first playthrough. It's like if Super Metroid had coop where all the intentionded feel of dread and loneliness goes straight out of the window. I'd say coop is something that should be earned after completing the first run. It's especially bad considering that you can only experience each Souls game once. I'm not even starting about the whole message in these games of never giving up and how Dark Souls changed the lives of so many people and helped them with real life struggles. Letting someone else take the aggro and sit there smoking while they do the work is basically giving up. Having a bad time with your struggles in real life? Just let some guy do it instead, lol. Seamless coop may be a fun idea for a drunk party with your goofy friends who are playing this game for the Nth time. But as your first run it's basically being disrespectful towards Miyazaki's work. What they're doing with Nightreign is obviously just trying to attract another type of audience. Specially the younger audience who likes something mindless like hero shooters or fortinite. It wasn't intended for the core audience to begin with. They don't even know if Nightreign will be a hit or not but they're taking a risk risk to test the grounds. It's why Nightreign is just an asset swap and a low resource effort. If it fails they'll just say they tried and be done with it as if it never happened.
The seemless coop mod being the basis of inspiration for Nightreign makes the most sense imo
