Ingredients: 6 Tablespoons unsalted butter 10 oz. package mini marshmallows, divided (reserve 1 cup) 1/8 teaspoon salt 6 cups fruity pebbles cereal 1/2 teaspoon vanilla extract Instructions: 1. Line a 9x9 pan with aluminum foil, leaving a couple inches of foil hanging over the sides. Lightly spray foil with non-stick cooking spray. 2. Melt butter in a large pot over medium heat. Once butter is melted, reduce heat to medium-low and add marshmallows (except for reserved 1 cup). Stir constantly for a few minutes, just until marshmallows have melted into a sauce. 3. Remove pot from heat and immediately stir in vanilla extract and salt. Then, quickly fold in fruity pebbles cereal and reserved marshmallows. Gently stir until all cereal is coated with melted marshmallow. 4. Continuing to work quickly, transfer mixture to prepared pan. Use clean, damp hands or a rubber spatula sprayed with non-stick spray to press mixture into a even layer. Press down gently, don't pack it down. 5. Let treats set at room temperature for 30 minutes - 1 hour before cutting. Use edges of foil to lift treats out of the pan, then cut into desired number of squares & enjoy! Store leftover treats in an airtight container or wrapped tightly with foil.
