      I take it you are grating/zesting the entire bean (and not just their skins) into the sugar/water solution, and then straining the gratings from the syrup before bottling?
      (Incidentally, Coumadin is pronounced COUmadin rather than couMADin. I suspect Coumarin is pronounced the same.)

      I just made some tonka bean syrup. Instead of a long infusion, I used your Lazy Cinnamon Syrup method, threw the ingredients into a blender, blended it, and let it infuse for 10 minutes before filtering and bottling. The color isn't as dark as yours but I'm hoping it will be every bit as flavorful! Try the same method out yourself and let me know how close I got!

    Thanks for the shoutout! It really is cold here in Brazil and it is the time we drink our national punch: Quentão! It’s simple syrup infused with orange, lime, ginger, cinnamon, clove and mixed with cachaça (or wine).

      @@bigjohnbriggs Here's the recipe I use:
      - 300g water + 300g sugar
      onto the stove top until it starts boiling, then add:
      - clove, to taste (I put 2 pinches)
      - cinnamon, 3 to 4 sticks
      - half an orange, sliced
      - 1 lime, sliced
      - 200g of ginger, cut into small pieces
      stir until it comes back to a boil, then add:
      -1L of cachaça
      Turn off the heat and stir a little. Serve hot

    Coumadin (the active coumarin) is what is in Warfarin, which is used commonly to prevent blood clots. It has a fairly narrow therapeutic window and is very sensitive to changes in diet.

    Interestingly, coumarin is also one of the compounds that contributes to the smell of cassia cinnamon, which is the most commonly used species in ground cinnamon here in the U.S.

    If I'm not mistaken, coumarin is actually the reason that the original Zubrowka, or bison grass vodka, was banned in the US in the 60s, since bison grass also contains coumarin.

    Tonka is used in fragrances very often. I know what they smell like in absolute form. I would love to taste this cocktail. It's definitely got me interested.

    Coumarin content is also why Polish zubrowka (bison grass) vodka is regulated/banned* in the US, and why Cassia cinnamon is regulated in the EU.
    * I can't find articles saying zubrowka has been unbanned, but I've also found it in stores in the midwest, so who knows...

    I used tonka beans before, really like them but if you put too much of it, it can become overwhelming. At a restaurant I worked we made a delicious flam with tonka beans and rose water, it was aaaamazing! For me it smells a mix between vanilla, bitter almond -like amaretto-, and nutmeg, but a lot more fresh. It was a time, like 10-12 years ago, where all the gin&tonics in Barcelona had tonka beans, never liked then in there, but this cocktail looks delicious!!!

    Coumarin is also the compound reponsible for the aroma and the flavor of Żubrówka - the bison grass vodka. If you've ever drunk it, you have a reference point for the flavor of tonka bean. But apparently that's banned in the US as well.

      The Educated Barfly from what I understand, it was banned, and now there is a formula produced for the US market that somehow eliminates the coumarin.

    You can buy tonka beans legally in the US, and I even have an import license from the USDA for the plants. Growing them currently in SWFL.

    This cocktail sounds interesting, although I'm not a fan of whiskey. I'm familiar with tonka beans through perfumery. I have the absolute(no, not vodka; it's a solvent-extracted essential oil). The first time I smelled it I thought; "Maple and brown sugar!". However working with it has made me think more; macaroons and pecan pralines. It's perfect in foodie-style perfumes and is a classic in Oriental-style perfumes.

      Todd Ellner Coumadin is the brand name. Warfarine, which is used in Coumadin, is a derivate of coumarin

    It looks like tonka beans can be bought and sold legally. The FDA cares when people use them as ingredients in food or drinks that are sold. So, one could give the advice to try this recipe at home because one can't legally buy the drink at a bar in the US.

    My grandfather was on coumadin back in 1997 when he blood clots in his legs. Incidentally, it's also the main ingredient in rat poison.

      You can order it on Amazon, it ships from Portugal, at least the one we bought. It might be one of those things where it's Illegal to sell in the US, but you can import it. It's Illegal for sale for the use in food and products.

    Another fun fact: chlorine gas and oxone also smell like fresh cut grass (in VERY tiny doses). And cyanogen compounds (like hydrogen cyanide) smell like sweet almonds... What is it about spring time smells and poisonous chemicals?

    No. The actual reason it is illegal is because DOW makes an artificial flavorant which tastes exactly like tonka bean. They came out with it in 1950.

      Cinnamon does include cumarin and not any less of it than tonka beans and the FDA doesn't seemt to care for it.

    if you eat 30 nutmegs tho I can tell you you'll have quite an experience... I mean just consuming 2 teaspoon straight up is risky.

      @@toddellner5283 you'll likely overdose that's what I meant. 1 nutmeg is 5-10 grams, 6 grams of nutmeg can cause convulsions, 9 grams can cause hallucinations. That's because of the myristicin in it. Effects may last quite a long time and you may die from it.
