  • We are excited to meet up with @MorAcro and his family - Kevin, Andrea and Rumi - in the beautiful seaside town of Tamraght! In this episode we all go shopping at the small Tuesday souk in Tamraght to buy ingredients to cook our own Tagine.
    Kevin and Gavin both decide on a beef Tagine and it turns into a Tagine-cooking competition! Have a look and let us know in the comments what you think about their Tagine style!

    Pease do not use tagine pots that are varnished. Chemicals will mix with the contents you are going to eat. You can find tagine pots that are varnished only from the outside, but those varnished in the inside should not be used. Preferably, buy an unglazed tagine, even if it doesn't look as nice and shiny. And for the first use, you have to put water only to cook for hours to sterilize it in a way. Good to see you back in Morocco

      ​ @mor acro nice looking tajine i bet that taste very delicious but next time you cook on a new tajine you need to soak it first in water for a fiew hours than let it dry on char colt before using it

    Im moroccan, i think all the tajines are good but you need cook the meet first with oinion and oil make sure that the meat have the sharmoula (piments and so ) you add some hot watter and when it's cooked 80% then you add vegetables carots are very delicious too with beef... But you did it well 👏🏻 and that's great!

    Great video from two of my favorite vlogging families .. and let me tell you guys that (the uniqueness of tagine is that you just need the right spices + good slow cooking time, and you have the most delicious dish, plus it's healthy since the pot is with the clay. Amazing video, Oh and i think harry and and Oscy would love to have a little sister ^^

    As for the potatoes, they must be peeled. A little water has been added so that the tagine does not burn. The raisins are finished, and we put them at the end with the plums.

    Just a little advice. When you buy the tagine go for the one that isn't glazed and isn't shiny. Go for the ones that look like plain clay. The top usually looks like a round dome. The plain clay ones are healthier and also it is preferable to leave the tajine in water overnight and then leave it in the oven to be heat-treated. Some tajines will break the first time if they do not go thru that process. Salam

      @@gavinsteiner3759 You bet. Cheers to you and to your beautiful family. You guys left Morocco but had to come back. That is very common with people that come to Morocco to visit, wether they're moroccans or not. We have a saying that basically translates to : "The spirits of the place want you to stay". You'd be surprised by the number of people who are just drawn back to Morocco as if some unseen force makes them feel home. Hard to explain but I'd say enjoy every single moment of it. 🏊🏄‍♀️🏄

    I believe that your husband has made a couscous tajine 😂😂😂 omg there are two main meat tajine first with dried prunes and raisins which is sweet and salty at the same time the second one is made by meat vegetables and olives without pumpkin

    Great videos guys. Love it! Regarding the tagines, I wanted to offer some insights that might help.
    There are actually two types of Tagines available in the market. The first type is the one that you have, which has a ceramic bottom that is rough and does not transfer much heat. The other type is called the "beldi" Tagine, which has a bottom that is not covered with any ceramic, but rather it's made of pure clay.
    The "beldi" Tagine allows the heat to distribute evenly throughout the food. However, if you decide to get one of these, there are a few things to keep in mind. Firstly, it's important to cover the bottom (where you put the food) with olive oil and let it rest overnight so that the Tagine can absorb the oil. This will help prevent the Tagine from cracking due to extreme heat.
    Overall, I hope this information is helpful and allows you to enjoy cooking with your Tagine even more!

    Good job for an unready tagine 👍🏼 little advice for more flavor next tagine :
    The first time you use your tagine, soak both pieces in water for 24 hours beforehand. Using a pastry brush, coat the inside of both pieces with olive oil and place it in a cold oven. Heat the oven to 100°C and once it reaches the temperature, leave it to for two hours to seal.

    A useful competition, which will play many roles in a tagine, is the special seasoning for vegetables and meat. Example: salt, sweet pepper, black pepper. (ginger and turmeric) can be added if you wish, we are talking about the tagine of Agadir and its surroundings

    I love the tagine because it contains natural vegetables and charcoal as well. It is very healthy. I advise you to stay away from canned food and to cook for yourself. This is an opportunity to spread the tagine in your country and to get to know the favorite Moroccan food.

    if you notice your tagine is dry you have to put some water. vegetables are cooked through steam 😊. it was an amazing experience.

    1. Add 1 or 2 tablespoons of Moroccan olive oil (is extra extra extra virgin)
    2. Only fill the tajin slightly higher than the edge so that the tajin can do the work and steam.
    3. ..... perfect practice makes perfect

    You had to remove the pumpkin because it is not used in the tagine, but after the meat was cooked, you had to add water in order for the potatoes to level and so that the tagine would not burn

    in this french pastry "mille feuille" there are really exactlly 1024 sheets. Why ? Cause it's made by a dough folded 10 times. The first fold you have 2 sheets, the second fold 4, the third 8, the fourth 16, . . . , the tenth 1024. Mathematics. Greetings from Tetuan the white dove.

    I believe that even tho the tagines were been cooking for two hours there wasn't enough fire to get cooked , it has to cover all the tagine space and not just the middle
