    Cellar temperature is well below room temperature, even in summer it’s insulated by its earth surroundings so it’s a much more stable environment than above ground with consistently low temperatures that remain cool throughout the year.

    Gold star from me Jessica for identifying the word "Ye" as being pronounced as it should be as "The" because the "y" is really a replacement for the now non existent letter thorn "þ" that can look like a letter p and a letter b combined with its sound of "th" as in the word "the". The terminal "e" on words like olde, shoppe, wilde, oake etc. should be silent. It was never there in the earlier middle English spelling but was added by Latin scribes to words, particularly when they didn't end in a vowel, just a bit like Italian words now all tend to end in a vowel. Brilliantly interesting video with lots of background history about these pubs and a temptation for me to visit one, or two, or three ....... when I'm next in London

      Always good when it gets out there that Ye Olde is pronounced simply The Old, always a pet peeve of mine. Cheers.

      the replacement of the letter thorn was because of the advent of dutch typesetters and their printing presses being sold into england. they didn't include a number of (4 or 5 i think) which we then had to replace (like the letter "Æ" which provided a hard "a" sound rather than the letter "a" which provided a soft "aaa" sound.. it was agreed between publishers etc that "Y" would be used instead of thorn in books etc and this spread to signwriters etc.

    London use to be a great place for pubs when l was younger. In the 1980''s so many traditional pubs with wooden panelled walls and little stairways existed, that was before they pulled all the wood out and replaced it with tubular steel and glass. I fear many more pubs will disappear with the energy crisis.

    Love your Canadian pronouncing of 'stout' ! Cute. Years back, Dublin received a lot of people from Bristol, England and with them came the recipe for stout which Arthur Guinness, an ale brewer, jumped on and the rest is history. I am very pleased to say that I live in Vancouver Island, these days and love Canada and Canadians.

    good video but let me pick you up on a point (i apologise if somewhere in the comments below this has been said already).
    NO beer is served at room temperature.
    keg beers have finished brewing in the brewery, have been carbonated and then put into the keg. they are refrigerated and served at around 2 degrees. one other point is that any beer or cider can be either keg or cask but in practice lagers are keg. there are cask ciders but this is relatively rare.
    Cask beers however are NOT finished brewing. they continue to brew and ferment in the cask in the cellar and have purely natural carbonation. as a result of this cask beers are much younger and you get a fresher taste. they are kept at CELLAR room temperature which is very different from normal room temperature. it's around 8 degrees.
    the misnomer about british beer (and other things) all come about because of the conditions during (and after for some years) the second world war where we couldn't keep the beer as cold as we wanted.
    p.s. you don't pronounce the "e", so its just old, not oldey.

    All good historic pubs, but you also have to go to The Lamb and Flag, Ye Olde Mitre, The Hoop and Grapes (not as impressive looking due to it being so thoroughly remodeled though), The Prospect of Whitby (and while you’re in Wapping you can also go to the Town of Ramsgate and The Captain Kidd, which aren’t as old, but still worth a look if you like riverside pubs), across the Thames from there just one stop on the overground you have The Mayflower, and a bit further out of the city core The Spaniard is worth a visit if you’re interested in old pubs. I would also add The Lamb if you’re near Russell Square or at the British Museum- not as old as the others, but still historically relevant, as it has some of the only remaining original and certainly best preserved snob shades.

    FYI. The basic difference between these two major beer classifications is how they are fermented. Ales are fermented with top-fermenting yeast at warm temperatures (60˚-70˚F), and lagers are fermented with bottom-fermenting yeast at cold temperatures (35˚-50˚F). Because of their warm fermentations, ales can generally ferment and age in a relatively short period of time (3-5 weeks). On the other hand, lagers take much longer to ferment (up to 6 to 8 weeks) because they are cold fermented.😊

    "Room temperature"? No, no, no! Cellar temperature, which should be cool at around 52 Degrees Fahrenheit, or about 11 Degrees in Catholic so you can taste the ale. Lagers, especially bad ones are served ice cold so you can't taste how bad they really are!

    Excellent video and knowledgeable. Except that "Real Ale " now called craft beer to please the Americans. Did not start 10 years or so ago , it started with the advent of "CAMRA" The campaign for real ale way in I believe the 70,s . This was to break the monopoly of the Big brewer's and encourage small enterprise such as "Butcombe Bitter" and "Wadsworth 6X".

    Samuel Smith brewery is the best independent brewery in the UK, don't know how to manage to film in Samuel Smith pub due to the fact your not be allowed to use any mobile phones or any digital media

    Your (first) real ale pint seems tiny. And for 4.80, it could be. Tipperary is now permanently closed. Boooo. Wheat beers have SOME wheat.
