1:35 you could achieve a higher defense spirit team by using Armor Knight + 1 Trade off Defense. As opposed to the 3 ToDs you used here. You currently have a 2x defense boost, but you could achieve a 2.5x boost! (Armor Knight 1.8x defense boost + 1 ToD 1.4x boost = 2.52x boost).
Funny enough if the enemy was link (with the shield art etc) even though it would say he's at 0% he would still be unable to fire the special light beam out of his F-Smash because he would technically be at 0.00000001% por something meaning he's not at 0% meaning it won't work, how sad lol
I think the biggest reason for why this video's defense is better than that other video's offense is that there are more options to be used for defence rather than offence.

Vordt was already a good choice, and then Abyss Watchers sealed the deal. DS3’s OST is amazing.
The abyss watchers are the best thing to ever happen to dark souls, both their history in ds1 and the fight agaisnt them in ds3.
