Excellent hand flown manual approach and landing. Perfect manoeuvring and positioning ! It’s nice to see great flying skills and less reliance on auto land. By the same token, it looks like manual approach is the only option for this runway heading.

I love the yoke design of the Embraer... also where is the retarder lever?? at landing a voice alert 'AUTO BRAKE' is heard.. so is this plane having automatic retarders??
By retarder I think you mean reverser. The reverser is engaged by the throttle levers. Pulling them after landing below the idle position. The autobrake voice you heard indicated that the automatic braking on the main landing gear was disabled and now the pilot is manually braking the plane.
It’s amazing how these lady pilots can so easily and adroitly maneuver these huge planes,it is a tremendous scary captive sight from my perspective just watching it on TH-cam.

Any Embraer Pilots that can answer: How come she keeps overriding and fighting the Autothrottle system? Would seem she always requested more thrust, why not just disconnect AT instead in that case? Or is it SOP to have the AT on till after landing?
The Embraer aircraft don't actually have Autothrottles. They control the throttle with their own hands, during taxi, takeoff, cruise, descent, and landing. I believe that's the same way for just about all the regional jets. I couldn't tell you why that's the case though, it just is.
