The old fashioned way to check if chicken was done was to stab and see if red juice comes out. If it's red, it is still raw, if the juice is clear, meaning you don't see anything, it's done.

@@feelsbadman1677 A vacuum sealer is pretty handy to have for cooking honestly. They're fairly cheap and are good for marinating, freezing, sous vide (it's a must for that), and other things. Even an amateur will have some use out of one
Feels Bad Man using a ziploc bag with the water displacement method also works. It's not quite as perfect as the vacuum seal method, but it's 95% of the way there. I assume that large ziploc freezer bags aren't a super fancy chef kind of thing.

You could do it like he does but without waiting for 4 hours and taking the air out. I'm confused why people are making a big deal out of these.. The patent was filed in 1999 and they have been readily available since.. @@MrJWTH you can still "vacuum " seal it without the machine. Just put it in a gallon ziploc bag and then dip it into a bowl of water to get the air out. Once it's all out zip it up before pulling out of the water. I have a machine but this way is quicker.

I actually tend to like a lot of the level 3s. A lot of them are so relaxed despite making the most complicated dish there. It's the level twos that I find hard to like. the very large majority of them (with exceptions like Lorenzo) are so casually pompous about their rank and think that "home cook" gives them some immunity or something. So they talk about their ingredients and process like their word is infallible but really it's just another way to make the dish.

@@learjet5819 depends because we cant taste the food. no disrespect to lvl 2 chefs but lvl 3 chefs are lvl 3 for a reason. the amont of work that goes into creating a different spin on something classical takes work. lvl 2 can only make classics but dont do anything original. they cant innovate. most viewers can relate to lvl 2 food but lvl 3 chefs are the ones that shape the food industry and trends. its like comparing gordon ramsay to your granny. sure your granny might make nice food but chefs get paid to make good food.

@@MrJWTH you can still "vacuum " seal it without the machine. Just put it in a gallon ziploc bag and then dip it into a bowl of water to get the air out. Once it's all out zip it up before pulling out of the water. I have a machine but this way is quicker.

This is one of the level three chefs I actually like. He seems pretty chill and down to earth.
I actually tend to like a lot of the level 3s. A lot of them are so relaxed despite making the most complicated dish there. It's the level twos that I find hard to like. the very large majority of them (with exceptions like Lorenzo) are so casually pompous about their rank and think that "home cook" gives them some immunity or something. So they talk about their ingredients and process like their word is infallible but really it's just another way to make the dish.
Disliking the level three chefs is just y'all feeling intimidated more than anything
