Sarah's Vegetable and Meat Casserole
6 Tbl. extra virgin olive oil
2 small onions, thinly sliced
1 pound zucchini, diced
2 tsp. salt
1 1/2 pounds ground sausage
2 Tbl tomato paste
1 1/2 cups white wine
2 fresh bay leaves
1 3/4 pounds russet potatoes (peeled and thinly sliced)
8 oz. mozzarella, shredded
1 cup grated Parmigiano-Reggiano
2 Tbl unsalted butter
Preheat oven to 400 degrees.
Heat 3 Tbl olive oil in a skillet. Add onions and cook until lightly softened (about 3 min). Add the zucchini and 1 tsp salt. Cook until the zucchini is tender and remove from skillet.
Add 1 Tbl olive oil to the skillet. Fry the sausage until crumbled and brown. Drain the grease. Then add the tomato paste and let simmer for a minute. Add in the wine and the bay leaves, bring to a simmer and cook until the sauce is reduced (about 5 minutes). Remove the bay leaves. Stir the onions and zucchini back in.
Toss the potato slices with 2 Tbl of olive oil and 1 tsp salt. Mix the two cheeses together in a bowl.
To assemble: Butter a large baking dish (4 qt size). Layer the potatoes in the bottom, sprinkle a third of the cheese mixture on top. Next, add all of the sausage mix, and then top with the remaining cheese mixture.
Cover with foil (making sure the foil doesn't touch the cheese topping) and bake on a bottom rack until bubbly around the edges (about 20 minutes). Uncover and bake 15 more minutes, or until the top is browned and crusty.
