A tip that I've seen before when you're trying to get that more umami or 'beefy' flavor into a dish that is emulating meat like a 'roast', add a little Vegemite or Marmite. I know it's a big flavor and many of us in the US either haven't tried it or have any it's a bit much lol but in savory 'meaty' meals like this, it's 😘 chef's kiss! Love ya❤
As someone isn’t vegan but tries to eat more vegan and vegetarian meals. Vegemite/marmite doesn’t just taste a bit of beef, if you dilute it so it isn’t super concentrated, it basically tastes exactly like beef. Not like a bloody stake, but more like it tastes like beef in a way like beef gravy or a beef stew. Beef that’s been cooked a long time with lots of brown caramelised bits, type of flavour. No weird ”hm what are the vegans up to” sort of after taste. But it’s very concentrated, so very little goes a long way. Even when making a pretty big batch of something I would suggest to add like half a teaspoon at a time, and taste as you go along. If you made a gravy using some diluted vegemite or marmite, some soy sauce, and veggie broth as the main flavourings. You could feed it to meat eaters and they would absolutely assume it was beef gravy. Only give away would if you decide to add a vegan dairy alternative in it (which can be delicious, but make it noticeable it probably is something vegan going on with the gravy)

Capers are amazing on pizza bread. I always use olive oil, capers, marinaded garlic, loads of rosemary, salt and pepper. It's amazing. Especially with a dip of garlicy soy joghurt dip on the side

I couldn't even bite all the way down on an olive without gagging. I tried about every 5 years. Capers were my gateway and eventually in my 30s I tried a kalamata and it clicked. I still can't believe I made it through.
ottolenghi has an asparagus recipe that is great for using up capers from other recipes bc its pretty simple. its roasted asparagus topped with toasted almonds, crispy capers, and fresh dill. where i used to live asparagus was 11.90 a pound so i would substitute brocolli
I would skip the "pot roast" label. That label may be the reason for keeping the cauliflower whole but it seems like everything would have cooked faster if the cauliflower was broken into florets. Awesome juggling, Merle. I'm impressed.
Looks really good Merle, good job! I'd probably eat it with some toasted bread. It would accompany this dish really well considering this is basically a flavour bomb and bread balances the intensity. Toasted because i think this dish would improve greatly with some texture? Everything is really soft and mushy.
JO's recipe said to cook 30 mins covered (to steam it) after which the cauliflower should be basted. Another 30 mins uncovered (to roast it). That combo really helps caramelize the flavors.

I got in trouble in 2024 with low protein, so your channel means a lot to me. I have to watch my iron levels, too, as I'm severely anemic. So I am with you 100% on the olive thing - cannot stomach them. But the capers are a great substitute. I have a lot of Jaime Oliver's cookbooks - they are very well done and the recipes are very tasty. His was one of the first cooking shows that I regularly watched years ago.
i HATE olives, but they're used (along with some of their brine) in a puerto rican rice dish that i love and honestly you wouldn't even know they're there! i always pick them out, but the rice tastes soooo good.
I don't know if it's different in the USA than in Germany, but especially with citrus fruits you MUST use organic in Germany if you want to eat the peel. The peel of conventional citrus fruits is not edible. Washing is NOT sufficient.

I watch you every week on my smart TV and I've never commented before (because smart TV), so I resolve to do that more this year! ❤ I think it would be cool if you partnered with a Palestinian chef to veganize some recipes for us and bring awareness to the issue. I watch Palestinian food videos sometimes and it all looks amazing, but not exactly vegan friendly. Another cool thing to do would be to collect a few LGBTQ chefs's recipes and give them a try, while telling their stories. Food can be an incredible medium of connection and solidarity, and you're definitely awesome enough to create that in your space.

I’m trying to keep track of the meat side of things because in Trump’s first term he relaxed a lot of food safety laws and we’re still feeling the repercussions of that-and I expect more of the same in the next term. I feel like that’s also important for non-meat. Thank you for your content! I want to try this. You make it look good!
I got even more nervous about his next term when I found out his relaxing regulations is what has led to so many of the food recalls recently. It was hard to keep up with all the things he was making worse in the moment, but from my recent understanding, corporations are now allowed to police the safety of their products instead of having an outside service do so. I imagine this is going about as well as congress getting to decide if they deserve another raise. 🙄

It's so it roasts in the skin. Give it a try, it's sooo divine! If I'm ever roasting a tray of veggies I always throw in some garlic cloves in their skins, before squeezing them out at the end 😍
it does not look appealing to me, given the texture, and I would really struggle if I was served this meal. however, the lemon and garlic game is insane and i'm definitely gonna use it in some nice bean stew! could work for a white sauce as well, especially with spinach!
