Nice and very simple recipe that I will definitely try out. A quick tip is to not mix things on top of your electronic scales as it can easily mess up the sensors and the calibration. Also, adding salt into the starter wet mix is counter productive as it will kill the yeast. Add salt after flour and you will get a much happier yeast.
Hey Amy, looks like another great recipe! Just to let you know here in the UK it's traditional to use use a fork when cutting the Muffin in half. All you do is prick around the centre with the fork and then pull it in half; this creates a rougher texture allowing more flavour between the nooks and crannies! Thanks for the video, will definitely give this a try

These are delicious! I am a beginner on starter. My family enjoys them weekly now. We make homemade mcgriddles (like mcdonalds), we just buy sausage patties.
I was recently offered some sourdough starter, but feeding, and/or making bread every week seemed daunting. In addition it felt to wasteful to discard unused starter. I so appreciate finding your kitchen videos on using sourdough discard. Kiddos on resourcefulness! I’ve made these SD English muffins three times now and they get better each time. I’ve yet to try the cinnamon rolls, but it is next on my list. Thank you very much.
Update Amy, I make the muffins like I told I was going to do. I made them square and cooked them in our black pan( cast iron).I do not use any oil to cook any bread on top of the stove.My wife and I like them very much.Another great bread for us to share.Thanks so much again .
Can we put them in the oven overnight with the light on for rising? Our house is chilly while we are not heating it yet and I didn’t really see it rise overnight.
Thanks for this recipe demo , made the dough tonight , doubled up and used mix spelt , whole meal, and whole meal spelt with half runny honey half maple syrup, excellent dough.......great video and clear demo 👌a Scotsman makes English muffins 😂 shed loads of starter left , what’s next? Other muffin flavours eg do they work with sundried tomato or I guess nice with some herb mixed in ?

Just made some, and they came out really nice looking. The temperature was a little hard to figure out though. I cooked them just under the medium mark. I have an electric stove. It was pretty cool watching them plump up. Thank you for the recipe! 😊

Question on making these: Can you do a cold proof in the refrigerator overnight and bake the next afternoon instead of morning? I won't be able to make them first thing and was thinking that if I just left them on the counter they would overproof. I am new to sourdough! Thank you!

Really Great Recipe ! I wondered it works or not. But finally I became to know it is a great sourdough muffin recipe. I share a just one tip here with you. I didn't use cookie cutter . I just cut into around 100g doughs for medium size muffins with dough cutter. I shaped a ball softly and push down with care to make muffin pre-shaping. I rest these it for 30min. Then made final Shaping. After 30 min 2nd proof, I followed your orginal next directions. It has a wonderful tasty, texture and fragrance. Thanks Amy for your great recipe! Have a wonderful day.

Finally someone lets the dough rise overnight on the counter! I have yet to use starter but I've done the same with dry yeast. It overferments and smells delicious like beer by the next morning. Is that the way they are supposed to smell? I've never tasted store bought English muffins. Thank you
I've used this recipe with yeast instead of sourdough starter (Gasp!) In lieu of the starter I added 50g of water and 50g of flour. 6g of (instant) yeast is about 2 teaspoons. The first rise, after the kneading took about 2 hours and the second rise, just before they are baked took about 30 minutes.
I do a sourdough liquid version with Onions, seasoning. It is like an everything English Muffin, but with a twist. I also have a fast 3 hour version with yeast support and a long version too. I like to make all type of sourdough treats, Thank You, Peace, Love, Laźaro
