    Ingredients:
    - 2 pounds (about 1 kg) pork belly or shoulder, cut into 1-inch cubes
    - 1/2 cup soy sauce
    - 1/2 cup vinegar (cane vinegar is commonly used)
    - 4 cloves garlic, minced
    - 1 medium onion, sliced
    - 2 tablespoons brown sugar
    - 1 tablespoon achuete (annatto) seeds, soaked in 2 tablespoons water (optional)
    - 3 bay leaves
    - 1 teaspoon whole black peppercorns
    - 1 cup water
    - 2 tablespoons cooking oil
    - Salt to taste
    Instructions:
    1. In a large bowl or container, combine the pork, soy sauce, vinegar, garlic, onion, brown sugar, achuete seeds (if using), bay leaves, and black peppercorns. Mix well, ensuring that the pork is coated with the marinade. Let it marinate for at least 30 minutes, or refrigerate overnight for better flavor absorption.
    2. Heat the cooking oil in a large pan or Dutch oven over medium heat. Remove the pork from the marinade, reserving the marinade for later. Add the pork to the hot pan and cook until browned on all sides. This step adds depth of flavor to the adobo.
    3. Once the pork is browned, pour in the reserved marinade, including the spices. Add the water and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let it simmer for about 1 to 1.5 hours, or until the pork is tender. Stir occasionally to prevent sticking and to ensure even cooking.
    4. After the pork is tender, uncover the pan and let the sauce reduce and thicken for another 10 to 15 minutes. Taste the sauce and adjust the seasoning with salt if needed.
    5. Once the sauce has thickened to your liking, remove the pan from the heat. Ilonggo-style pork adobo is typically served with steamed rice, so plate it hot and enjoy!
