How To Make Mutura at Home (Kenya)

    Mutura is a Kenyan delicacy commonly known as "African Sausage" loved by many. This video highlights version one and two.
    I would like to debunk the following myths as it relates to preparing this delicacy:-
    1. Mutura is only delicious when prepared in an unsanitary environment.
    2. Mutura is only delicious when the intestines are not cleaned very well.
    Moving on...
    Version 1 - We will use cooked ground beef.
    Ingredients
    Ground beef - 85% lean & 15% fat
    Cow/Goat intestines
    1 large red onion
    10 cloves garlic
    2 habanero peppers
    4 red thai chilis
    2 green thai chilis
    1 large capsicum
    2 beef bouillon
    1 tbsp black pepper
    1 tsp pink himalayan salt
    1 bunch green spring onions
    10 sprigs cilantro
    Add ground beef into a pot and boil until tender. Ensure to drain the excess fat before proceeding to the next step. Next add red onions and allow to cook. Once the onions have been cooking for about 2-3 minutes add garlic. Allow this to cook for about 2-3 minutes, stirring as needed to prevent burning. Next add the habanero, green and red chilis. Next we will add capsicum and allow that to cook, stir to prevent burning. Next add beef bouillon, black pepper, salt and give it a good mix and allow the spices to cook with the ground beef for a few minutes. Then, add green onions, cilantro, give it a good mix and turn off the heat. This smells amazing. This is ready for stuffing, set it aside and let it cool down.
    Version 2 - We will use the Cuisinart Electric Beef Grinder & Sausage Maker.
    Beef chuck roast cut
    1 tsp pink himalayan salt
    1 tbsp garlic powder
    1 tbsp black pepper
    1.5 tbsp hot chili powder
    1 tbsp onion powder
    Cut the chuck roast cut in sizable pieces to fit in the meat grinder machine as seen in the video, then start the grinding process until done. Next you will season the ground beef at this time with the above ingredients.
    Give this mixture a good mix, you may use your hands. This is now ready for stuffing. Feed the machine and start the stuffing process as demonstrated in the video. Do not stuff it too tight, as it could burst while cooking. When done, secure the other end too and done! Today, we cooked version 1 and version 2 was stored in a ziploc in the freezer for future use. Back to version 1, ensure to prick a few holes with a sausage pricker, this is ready for the oven/grill (you could also fry it on a stovetop).
