They are sea trout running up from the sea to Spawn, after a week in fresh water they lose their silvery hue and resemble brown except they don't have any red spots.
That second trout was 💯 percent a stockie you can tell by its fin on the top and like you said no red spot like our wild population👍 that’s probs why’s you havnt seen them before

During my childhood in the early 1940's I lived in a small coal mining village hamlet. Our next door neighbours were very poor and relied on any wild rabbit, hare or fish the family boys caught. I saw some huge fish the boys brought home and their dad skinning Pike ( their dad told me they would eat anyrthing but Pike fish skin ) or gutting all the other fish they had caught. So, every time I see a caught fish retrurned back to water it reminds me of "The ones that never escaped"

That trout you caught with the different coloration is no different to any other brown trout most creek browns have red spots and some don’t like a sea trout which are also just regular brown trout
i did same on a tributary the river Loxley ( Sheffield named after a Saxon >Robin of the Loxley) was deep run long never got a thin in it up stream worming no path you hung on to trees One morning as I stood loads of baby rats came down bank ran round me feet lovely looked up at me and ran ok Penal tackle 2 14 hooks in tandem cast bugger went wrong went left let it ride BANG controller went then reel screamed Up the pool down the pool I stopped going down more . I had chest waders ?? I jumped in pool up to me tits i remembered my pal saying no got nothing in that pool its a cannibal trout I was in water I netted it on second pass on bank its teeth we huge 0ne ounce under 3 lbs Tasted ok
