That Italia Squisita video is the only way to learn how to make pesto.
The best Pesto I've tasted was made by a bolognese guy we met in Paris in a hostel. We didn't have a mortar and pestle, he used a bottle of beer and a bowl and the Pesto was amazing. The magic is in your wrist and the technique.
Since this video I bought my Mortal and pastel and made pesto for my friends and parents. Love it

Alex you need to get yourself a wet grinder, it is traditionally used in South Indian cooking. Essentially a mortar and pestle that runs on electricity

Yes! As he often says, blades separate cells, in a mortar they are crushed, so the flavours are way more diffused. But for sure it takes more time

If you use a food processor, you might as well add water to your pesto... you just destroy the herbs.
Most use a food processor because they do not own a pestle and mortar and they do not need one as they have a food processor. Is the pestle and mortar better no idea and frankly do not care, so why waste the money, storage space etc.
Cause the taste is worlds apart. You think centuries of Italian mothers, grandmothers, and chefs are lying to you?
If it’s not the same stuff, please try using the same ingredients in both batches

It's the exact same stuff... Pine nuts, garlic, olive oil, basil, Parmigiano reggiano ... Basta
99% of recipes online is not that good.
