You know, Taiyang Xiao Long (Ruby and Yang's father) is sort of like the adult version of Jaune Arc. Even when I first saw him I felt he had a strong resemblance to Jaune. It is not just his appearance either. He may not be the coolest, or cool in general to some, but he is a good person that is trustworthy and reliable who does his best for those he cares about.

If Velvet couldn't see what Qrow meant, she didn't read into it enough.
Qrow made himself look cooler to teach the girls that coolness isn't everything. He wanted them to remember that family is family, and should be cherished no matter the reputation of the member. Be it an embarrassing father or a cool uncle, nobody is exempt from the love of one's family.
Maybe the reason why Taiyang keeps messing up is because of QROWS SEMBLANCEEE

Zwei just seems to be there for balance. If Tai was talking alone at the edge of the screen, he would seem extremely weak & weightless (as it would be 3 people’s opinion against 1). Because Zwei is there, viewers are more likely to empathize with Tai (as the scene would then have 3 people’s opinions against 1’s, and one being “on the fence” about the whole thing).

The Luke Skywalker thing made a little sense, although it was a sudden plot twist, because it later has a form of impact on the story. Also not to mention it'd be an overly unnecessary plot twist, cuz Dust knows we got enough of those in RWBY, lol. But, hey! It's a good theory, and i don't hate people for believing in it.
