    That salt and pepper fried tofu might actually get my husband to enjoy tofu. It looks amaaaazing. Super informative video, as always (and the flute occasionally in the background is so soothing)

    The other thing is that grandfather is respectful. When asked how to make this vegetarian, he answers the question sincerely with suggestions like adding mushroom.
    While such a question/suggestion is obvious to older people (like me), it takes a second to be kind to the young people who have been abandoned by their parents to the world of cooking. (Don't forget single working parent households are extra hard on the kids.) Even when your parents did try to teach you, you never know when there's a tip or trick that your parent/s didn't teach you or you haven't stumbled on through your own experimentation.
    It also pays to remember that some people do not like to experiment and quite literally need to follow a recipe or chef with the same kind of nervous energy that one might have for an academic exam. When you experiment without any guidance, the chances of getting blah food is pretty high, and if you have a sensitive pallate, it can really put you off trying. So yes, it is a serious question for some people, and on their behalf I thank grandfather for answering it respectfully.

    Your videos are very inspiring. Tried the ma po tofu today and it was very addictive. I substituted the meat with veggy variant made of pea protein. Tasted well enough for me as a meat lover

      Thank you for the input! I am a meat eater, however not anymore. I have to eliminate it from my diet, not wanting to but needing to. If others can survive so can I. Lol

      @@dawnstanley1733 Sounds scary, hope you Do well. I just avoid it if possible when cooking for the whole family. My wife is a vegetarian. The other "Wow"-moment was, when we made aubergine quite similar to the recipe from Mr Lau.

      My 2c worth (in order of importance): the ubiquitous soy sauce (of course), oyster sauce, toasted sesame oil, Shaoxing rice wine, fish sauce (or shrimp paste/gapi/belacan for that hint of seafood umami)

    I love watching your videos because my mom Americanized my siblings and I. I never got to learn much about my culture but watching your videos makes me feel close to home :) I remember Par Par and Gung Gung making Lo Mai Gai and the Lo Bak Goh for me all the time as a kid… Does your dad know how to make Har Gow? I wonder if he knows how to make Baked Guk Cah Siu Bau- I’d absolutely explode to learn those recipes 🥹❤️ Par Par and Gung Gung were born and raised in Macau, and Dai Yee Ma was born in Macau as well! Yee Yee and my mother were born in Chinatown NY 😅 I’m the youngest, but the only other word I know for family terms is Gau Gau 🤣

    What would be a nice substitute for oyster sauce in Chinese recipes for people with shellfish allergies?

      There is a mushroom oyster sauce made for vegetarians I think as this diet has a big part in Buddhism.

    I love tofu, especially the stuffed tofu dish. However, I noticed Daddy Lau placed the hot wok on the counter right after he finished steaming the stuffed tofu. Yikes. Hope he didn't damage his nice granite countertop!

    Guiltily speaking, fried is soooooo yummy, I love it however it may be served. Gimme spicy, juicy, fried tofu with some steamed rice or dry noodles, I'm a happy gal. 😊 🌻🌻🌻🌻🌻
