- Pandan Macapuno Cake is a light, soft, and fluffy cake with coconut milk and pandan (screwpine leaf) flavor. This 3 layer cake is filled with Macapuno and a light pandan whipped cream frosting. The toasted desiccated coconut on the sides of the cake gives more unique flavor.
Ingredients:
1 ¾ cups cake flour, sifted
1 ½ tsp baking powder
½ tsp salt
¼ cup softened butter
½ cup oil
1 cup sugar
6 eggyolk
1 cup coconut milk
3 tsp pandan extract (I used Butterfly pandan extract. You can buy this in Asian Stores)
6 eggwhites
½ cup sugar
Frosting:
2 cups heavy cream
1 cup powdered sugar
2 tsp pandan extract
Filling:
2 bottles of Macapuno String, drained
**toasted desiccated coconut
** you can make 2 batches of frosting for more decoration on your cake.
