    One culinary aspect that most tour guides and travelers overlook is the fact that in Christian Orthodox countries there are over 200 fast days. On these days observant believers abstain from meat, meat by-products, dairy products, fish, poultry, and eggs. Vegetarian/vegans simply have to let it be known they are eating "Post." Though many may resist or not condon the moral reasoning of certain vegans, *everyone* understands "Post," and most restaurants and markets have offerings clearly marked as such.

    Very nice. But it seems no foreigner know about the many vegetarian and vegan dishes we have. Even vegan sarmale, made for Lent.

    I would never think about "sarmale" as being Turkish dishes but much more an ancient Thracian dish thinking that the Turkish came less than 1000 years ago in Anatolia and there was living the Thracians as well or anyway people with a very similar culture. I can't figure out csarmale " (cabbage roles) as a nomadic people dish. Just this about, would never become a delicacy without the pork meat flavour.
