    Interesting but...
    Q. is there actually any nutritional value left after the fermentation? What's left other than possibly some nutritionless fibre?

      exactly what I was thinking. How does it even rise? Bread rising is a byproduct of fermentation between the yeast and the sugars in flour. If there are no sugars left in the flour, the yeast don't have anything to eat. They must either be blending this with fresh flour, or adding a bunch of sugar to the dough.

      Its stripped of all its starch, sugar and protein. What's left is essentially sawdust. Maybe you can add like 10% the spent grain to increase fibre, we could all probably use it. But this is a FAR cry from a circular economy. Also, this isn't reducing food waste; food waste is wasting good food. This is making food from waste.

      It's actually very healthy. It has 1/3 the carbs, 20 - 30% protein and 45% of your daily fibre plus probiotics

    Phillips Brewery and Portofino bakery in Victoria have been doing this for a while. They call it Maltygrain

    why would you do this? the beer process stripped all its nutritional value already. is the point to just eat filler food that fills u but has no nutrients in it?

      Uhhh, no. Yeast and flour = bread. And yeast and malted barley = beer.

      @@sexynelson100 Yeast is not a "raw product." It is an organism that is added to the flour or malt barley to cause fermentation. It grows by converting starches, eating the resultant sugars, and pooping out alcohol and Co2. I make bread, and I don't need to add yeast, I just add old flour and water that I kept from the previous batch and is already fermenting.
