The nickname the foals - young horses was already explained by someone else in the comments and comes from the team of the 70s with many young players who played energetic like young horses who can‘t be tamed. One of those players was Günter Netzer which gave the mascot Jünter - Günter with a rhinish accent - the name. You saw Jünter in the show as the little puppet horse. They were called foals in an article from Kicker in the 70ies due to their young age in average and their quick dribblings and passes, and the public adapted it.
