Sam gets it. There are a lot of channels out there that don't explain several things. Not everyone has been there since early videos when things were explained. If he wants people to learn he should teach correct methods. Never press meat like that unless it's a smash burger that just hit a flat top griddle and not a grill. Just squirted out a lot of moisture (that's what she said) from that chicken.

Just made this for me and my daughter. Very delicious! The biggest problem I had was that the provolone has just barely melted by the time the bread was nicely crisp. I highly suggest making sure the ingredients sit out to warm up for a bit before making and cooking. Way too much for just 4 sandwiches though. I can get 6 easily.

Sam, I would have not known about this if it weren’t for you. I made a “test” recipe without the chicken, and it was excellent (no mixer), then I incorporated the buffalo chicken (no mixer) in another go a few days later. I made this for my family and it was terrific, especially with tomato soup. Thank you!
I think they look a little bit burned, personally. I like to cook my grilled cheese low and slow so the middle gets hot, while the outside stays golden brown. Those sandwiches were too charred for my taste.

Made this for my gf and kids, and it was amazing! We did margarine instead of mayo and it was delish. Re: mixing with a hand blender vs. just mixing it with a spoon, it's easier to spread on the bread after blending. Also, made this without chicken for my daughter. Will be making this again!
You shouldn't use margarine that's awful for you it's like a half a step away from plastic. A little bit of mayonnaise never hurt anybody I mean you can get vegan mayonnaise or even low fat mayonnaise

My husband and I just made these. For the Mayo, I added garlic, parsley and Hidden Valley Ranch. My husband has now had a grilled cheese with Mayo- the way it’s supposed to be 😉
The cheese concoction is basically something I've made as a dip for tortilla chips for years. The only thing I do differently is add the same amount of Ranch as Buffalo Sauce. Since I've made this as a dip, I think I'll give it a shot as a sandwich. If you're curious about it as a dip, just use a 9x9 pan in the oven at 350 for about 30 minutes. I top it with shredded cheese before putting into the oven to give it a nice brown layer on top. It's my go to snack food for game day.
For real. The recipe on the back of a bottle of Frank's buffalo sauce. Disney chef: "How can I get away with just eating a bowl of this?? I know! I'll put it on bread and call it a grilled cheese!" Profit.

@@julianjolts5050 you have a larger room for error with other foods but in baking a little too much flour makes the bread clumpy. Too nuch water and the inside doesn't bake quick enough for the top to not burn

Ok I learned the mayo instead of butter on a grilled cheese back in the mid 80s from a diner chef in New Jersey. It is 1000 times better. Everyone I tell this to thinks I'm crazy until they try it. I will be making this one!!
I've done many tests, and I'll tell you how to get the crispy-crunchiest grilled cheese possible. The key is slow-cooking (with just plain butter). It's important to understand scientifically what makes fried things crispy. When a piece of food is fried or flat grilled, it gives off moisture. The fat used to fry keeps the contact surface of the food from burning (by distributing heat more evenly), while water is removed. Think how things bubble when dropped into hot oil...that's steam coming from inside the food. Slow frying (saute and fry are really interchangeable) a grilled cheese on a setting of like 4/10 on the stove allows the maximum time for moisture to be removed, which then makes a divinely crispy and tender crust on your grilled cheese. Try it out. You'll see. :)
Mayo gets crispy like butta. Low medium heat. Use Texas Toast and grill all 4 sides on 2 slices of bread. Add cheese when you flip. Cut diagonally into 1/4’s.

I couldn't get plain Monterey Jack cheese, the only one we had at supermarket was infused with jalepenos, but it actually worked well. Made me think it was worth suggesting to add some chopped ones to the cheese mix, wouldn't over do it it though, could take away from the flavour... anyway. We don't really do super high calories, cheesy things like this very much in Australia... Was pretty hectic, but satisfied. First thing I've made from the channel. Thumbs up my dude.
Mayo is my cheater move for grilled cheese too! It tastes awesome and is so much less work if you don’t have soft butter at hand. I tried once with Japanese mayo though and didn’t like it as much, oddly enough, as I usually prefer it overall!
If you can add a drink and chips for $4.99 at Disney World or Disneyland that would be a deal. Lol It was like $5 for the drinks (no refills) and $3.50 for a small bag of plain Lay's potato chips.
We did this and loved it. Made the mix next time, heated up some corn tortillas and made them into taquitos in an air fryer...this is our favorite way. Flautas work too!

Sandwich looks amazing!! Sam’s sandwich cutting has always driven me batty. Instead of letting the knife do the work the whole way through he usually cuts about 1/16” in and then jams the knife down squishing stuff out. Which is really surprising considering his emphasis on proper technique cutting anything else. I think he secretly hates bread and wants to bash it.
I would add two other ingredients, Chopped bacon and crumbled bleu cheese into the chicken, sauce and cheese mixture. That's what we have at home that we call "adult grilled-cheese"
Recipe has been added to my arsenal of deliciousness! I have a regional dish suggestion for you guy at STCG. It’s called the “Slopper” from Coors Tavern in Pueblo, Colorado. It’s an open face cheeseburger served on a bed of fries and smothered in green chili! I used to drive an hour each way when that craving sets in.
mayo is actually what I use in the pan for certain foods when I have no butter or oil. works great with eggs and such, absolutely killer on the outside of a grilled sandwich. broke cooking secrets and apparently not-so-broke cooking secrets too!
I make a spicy Buffalo chicken dip. 1 cup of cheddar 1 cup of ranch. 3/4 Frank’s hot sauce Small container of cream cheese. 2 chicken breast shredded mix together and bake. Maybe some bacon 🥓. Mmm good. Bag of nachos way ya go. Love the videos

Mayo is my cheater move for grilled cheese too! It tastes awesome and is so much less work if you don’t have soft butter at hand. I tried once with Japanese mayo though and didn’t like it as much, oddly enough, as I usually prefer it overall!

We did this and loved it. Made the mix next time, heated up some corn tortillas and made them into taquitos in an air fryer...this is our favorite way. Flautas work too!

Sandwich looks amazing!! Sam’s sandwich cutting has always driven me batty. Instead of letting the knife do the work the whole way through he usually cuts about 1/16” in and then jams the knife down squishing stuff out. Which is really surprising considering his emphasis on proper technique cutting anything else. I think he secretly hates bread and wants to bash it.

I would add two other ingredients, Chopped bacon and crumbled bleu cheese into the chicken, sauce and cheese mixture. That's what we have at home that we call "adult grilled-cheese"
May i ask what the hell chopped bleu cheese is?? You can never have too much bleu but never heard of "chopped"

I have a regional dish suggestion for you guy at STCG. It’s called the “Slopper” from Coors Tavern in Pueblo, Colorado. It’s an open face cheeseburger served on a bed of fries and smothered in green chili! I used to drive an hour each way when that craving sets in.

mayo is actually what I use in the pan for certain foods when I have no butter or oil. works great with eggs and such, absolutely killer on the outside of a grilled sandwich. broke cooking secrets and apparently not-so-broke cooking secrets too!
I make a spicy Buffalo chicken dip. 1 cup of cheddar 1 cup of ranch. 3/4 Frank’s hot sauce Small container of cream cheese. 2 chicken breast shredded mix together and bake. Maybe some bacon 🥓. Mmm good. Bag of nachos way ya go. Love the videos
