I’m planning to do a simulator just like yours, except I have a minor dilemma: Do you suggest that I buy the Honeycomb Alpha and Honeycomb Bravo for the yoke and throttle, or recreating them like yours? I plan on doing everything else just like you do. I’m planning on using it to help my dad with his PPL. Thanks!
Honestly I'd probably go for a honeycomb yoke if you want it to be more plug and play, but you can go with mine if you'd like to have it dual linked. My current yoke doesn't have the final developments I want to implement. There are people online who have extended the honeycomb yoke. You could probably damp the self-centering action of the bungee cords by using some silicone grease on the drawer sliders.

Have you researched the possibilities of ToF sensors instead of POTS, so you can avoid all the gear assembly for the pitch axis.
I have not - If they are precise and linear it may be a good substitute
