    Sa dahon ng gabi/taro, kung makikita nyo sa likod nyan, may mga ugat ugat or fibrous lines/skeletons, dapat wag nyong isasama yan sa pagluto kung fresh pa, maliban kung natuyo na yong dahon, kasi dyan nanggaling yong malaking portion ng calcium oxalate/dagta na makati at kahit hindi mo yan haluin ng haluin sigurado yan may kati kahit lutong luto na. Believe me mga kabayan dahil matagal na akong nagluluto nyan sa iba ibang sistema o paraan.
    Para hindi magiging makati ang gabi o laing ninyo, ganito:
    1.) Una, piliin nyo yong klase o quality ng gabi na makinis at halos uniform lambot ng balat ng stem/paklang at dahon nito. Paghindi, wag nyong isali sa pagluto yong portion na hindi makinis at matigas dahil marami o mas marami ang calcium oxalate o kati nyan. Isa pa para malaman mo kung maganda quality ng gabi, pagbinalatan mo ang stem ng gabi, yong balat mismo ay tuloy-tuloy na natatanggal o hindi basta basta napuputol. Minsan may napuputol din pero dapat majority ng balat hindi basta napuputol pagtinanggal mo. Palatandaan yan na maganda ang quality ng gabi mo at sigurado hindi yan gaanong makati. ( Note: may kati pa rin yan, kahit konti. Sa ibang paraan mo tatanggalin yong ibang kati nyan.)
    2.) Karagdagan sa preparation, wag nyo pong paghaluin yong stem at dahon na wala ng fibrous skeletons. Dapat mag kahiwalay na lalagyan kasi dapat uunahin sa pagluluto at pagpalambot yong stem dahil mas matagal lutuin yon.
    3. Para mabawasan ng husto yong calcium oxalate o kati ng dagta o dugo ng gabi, ibilad nyo sa araw pareho, hindi naman kailan matuyo o tuyong tuyo dahil ang gabi pagmasyadong tuyo na, hindi na po yummy o masarap ang lasa, dry sya at medyo makunat na kahit lutong luto at maraming gata, at maganda ang pagkaluto.
    O, kaya kung nagmamadali ka, i-blanch mo o hugasan mo ng hiwalay ( stem at dahon) sa mainit na tubig. Ang paraan na to, hinuhugasan o tinatanggal mo yong calcium oxalate/dagta/dugo ng gabi bago lutuin. Remember: calcium oxalate/dagta/dugo ng gabi (yong kulay berde na liquid na nagba-brown yong kulay pagtumatagal at natutuyo na). Kaya pagnatanggal mo yan, malaking kabawasan na maiwasan yong pagkati ng gabi.
    3.) Sa pagluluto, hanggat maari iwasan nyong haluin ng haluin. Ganito, pagluto na yong pangalawang gata, ilagay una yong stem/paklang, takpan at pakuluin. Pag half-cooked na yong stem, ilagay nyo na yong grated na dahon/leaves ( walang halo muna), takpan muli at pakuluan sa medium heat. Pag half-cooked na rin yong dahon, iyan ang palatandaan na pwede nyo ng haluin yong yong gabi nyo, baliktarin mo na at yoong dahon naman yong sa ilalim. Sa puntong ito, pwede nyo ng ilagay yong kakang gata, mas marami mas maganda. Pagnilagay nyo n yong kakang gata, wag nyo na pong takpan yong kawali o kaldero na pinaglulutuan nyo dahil yong gata magbuo-buo o naghihiwalay sa tubig at hindi magiging yummy yan. Pagnaninilaw na yong kakanggata, saka nyo na haluin. At pwede nyo ng haluin ng haluin yong gabi nyo. Note: dapat mahina lng yong apoy para hindi matutong yong ilalim.
    Sa procedure na yan, pinag uusapan lng natin kung paano maiwasan yong pangangati ng gabi o laing.
    Ibang usapan pa kung paano magiging masarap o yummy yong laing mo. Depende pa yan sa klase ng sahog o mga sahog mo at teknik kung paano mo yan lutuin.
