    Desi tinda (also known as Indian round gourd or apple gourd) ki sabzi is a popular North Indian dish, particularly in Punjabi and Rajasthani cuisine. It's a simple and flavorful vegetarian dish made with tinda (apple gourd) cooked in a blend of spices. Here’s how you can make it:
    Ingredients
    :250 grams tinda (apple gourd
    ), peeled and cut into quarters
    1 large onion, finely chopped
    2 tomatoes, finely chopped
    1-2 green chilies
    , slit1 teaspoon
    cumin seeds (jeera)1 teaspoon
    ginger-garlic paste1/2 teaspoon
    turmeric powder (haldi)1 teaspoon
    red chili powder1 teaspoon
    coriander powder (dhania powder)
    1/2 teaspoon garam masala
    Salt to taste
    Fresh coriander leaves for garnish
    2 table spoons oil
    Instructions
    :Preparation
    Wash the tinday and peel them. Cut each tinday into quarters and set aside.Cooking:Heat oil in a pan on medium heat. Add cumin seeds and let them splutter.Add the sliced onions and sauté until they turn golden brown.Add the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.Add chopped tomatoes and green chilies. Cook until the tomatoes soften and the oil starts to separate.Add red chili powder, turmeric powder, coriander powder, and salt. Mix well and cook for a minute.
    Add Tinday
    Add the quartered tinday to the pan. Stir well to coat them with the masala.Cover the pan and cook on low heat for about 15-20 minutes, stirring occasionally, until the tinday are tender.
    Final Touch
    Once the tinday are cooked and the oil separates from the masala, sprinkle garam masala powder and give it a final mix.Garnish with fresh coriander leaves.
    Serve:
    Serve hot with roti, paratha, or rice.This simple yet flavorful dish is perfect for a traditional home-cooked meal.
