    TENDLI KI SABJI
    Preparation time : 10 minutes
    Cooking time : 20-25 minutes
    Servings : 2
    Ingredients
    2 tbsp Oil (तेल)
    ½ tsp Mustard Seeds (सरसों के बीज)
    ½ tsp Cumin Seeds (जीरा)
    1 inch Ginger - chopped (अदरक)
    2-3 fresh Green Chillies - chopped (हरी मिर्च)
    1 sprig Curry Leaves (कड़ी पत्ता)
    2 heaped tbsp Peanuts (मूंगफली)
    ⅓ cup fresh Coconut - grated (ताजा कसा हुआ नारियल)
    ¼ tsp Asafoetida (हींग)
    ½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
    ½ tsp Turmeric Powder (हल्दी पाउडर)
    ¼ tsp Coriander Powder (धनिया पाउडर)
    ½ kg Ivy Gourd (Tendli) - sliced (टेंडली)
    Salt to taste (नमक स्वादानुसार)
    3 tbsp Coriander Leaves - chopped (धनिया पत्ता)
    2 tbsp fresh Coconut - grated (ताजा कसा हुआ नारियल)
    ½ small Lemon Juice (नींबू का रस)
    For Garnish
    fresh Coriander Leaves (धनिया पत्ता)
    fresh grated Coconut (ताजा कसा हुआ नारियल)
    Process
    In a kadai heat oil and add mustard seeds, cumin seeds, ginger, green chillies, curry leaves saute for half a minute.
    Now add peanuts and saute for half a minute on medium heat and then add grated coconut and saute for a minute.
    Then add the asafoetida, degi red chilli powder, turmeric powder, coriander powder and saute until fragrant.
    Now add the ivy gourd (tendli), salt and mix everything properly then cover and cook for 5-7 minutes on medium heat.
    Remove the lid and add coriander leaves, grated coconut, lemon juice and give it a final mix.
    Serve hot in a serving plate and garnish with coriander leaves and fresh grated coconut.

    I am surprised that people didn't like Kundru in their childhood... In Telangana, kundru fry is part of wedding/function buffet spread... And is quite sought after... Thank you for sharing such great recipe which is different than what we are used to.. will definitely try... Thank you!!

    Being a South Indian l am used to having this vegetable since childhood with black channa as a combination instead of peanut. I love this vegetable n we grow it at my inlaws place. I will definitely try this recipe. It looks so tempting n flavourful.

    As you have lived in Bengali Tola, you must be aware that padwal & lauki are extremely loved vegetables amongst Bengali households with classic dishes like Lau chingri (Lauki prawns), Potoler Dorma & Lau er Kofta just to name a few. So Bengalis generally don't run away from these vegetables.

    Nice, i make it with lots of garlic in the phodni, never tried only ginger, coconut...will try this next time. I do put roasted ground peanut towards the end though.

    Jitni saari sabziyon ki naam liya gaya saare mere favourite the bachpan me. Tendli banane ka simple recipe hai aaloo (half size of French fry size) & kundru lacha type katke sarso ke tel me pyaaz & green chilly fry kar lo. Uske baad thoda haldi, salt, aaloo & kundru, then fry them 2minutes. Cover them till the aloo soften. Then uncover it & fry it gently till the water evaporate. Puri ke saath mast tasty lagta.

    Some call it tendli...we call it tondli... it's my fav...but never knew it could be made like this...it also tastes great in simple tadka of rai haldi mirch n hing...we also use it in khichdi, masale bhat, tondli bhat

    I loved kundli ka bhujia.. Mere ghar me to meri wajah se hi banti mostly ya mai jb akele rhti thi to bhi banati thi.. Baaki saare bolte health k lite achi nhi kundli to bilkul nhi khate but it's alright to eat anything in limited quantity

    Looks yum! Kovakkai or kundroo as we call it, is a favourite sabzee (especially my late fil). Made with lots of oil, degi mirch or sambar powder, salt, turmeric etc. Will definitely try the RB style! Bound to get kudos :)

    This is very similar to Andhra recipe where it is served with Pappu (daal) and rice it goes amazing with that.

    We also make tendlya bhutti.
    Cut tendli in roundels,apply salt keep aside. Chop onion . In a pan add 1/2 tsp oil add 1 tbsp coriander seeds and few methi seeds , red chillies fry till brown. Cool take 1/4 cup coconut gratings, fried ingredients, small piece of tamarind, a small piece of jaggery and salt .grind to smooth paste. Keep aside.
    In a pan add 1 tsp oil add mustard seeds n curry leaves add onion and tendli roundels,little haldi, stir fry till onions are light brown n tendli is almost cooked.add ground masala ,little water for gravy consistency. Mix and simmer for 5 minutes.

    My mother used to make this sabzi ..Parval..and kundru..ji laal wale ki sabzi nahi banti in my childhood..but ab mai zarur banaungi aur khaungi bhi..waise..jye mujhe kabhi achhey nahi lagey 😁😁😁☺️☺️

    Kundroo and parwal they both are different . In my grandma backyard there was a big huge wine of kundroo I never like to eat cooked but ate raw like cucumber I bought parwal few days ago maybe make tomorrow watching from USA

    You should also try the guju’s style Tindora. And there is another version of marathi style tendli. On oil loads of garlic then rai and then add the tendli saute well . Add once half cooked turmeric chilipwd and sprinkle besan that it just coats the tendli . Toss till all is cooked. Try it with bhakhri.

    Nice bro Ivy gourd is disliked by many of them including me. My son too don't like. I am going to try this way. I don't put koitmeer and coconut. Rest is same. This tendli is made in different style. Gravy style is made in wedding in North India. But in South India I have not seen in wedding. Maybe many of them don't like tendli. 😄😄anyway thanks Ranveer bro and i like your cooking time talking. Something new I have learned that red riped tendli can b used for salad.
    Do share some chatni Or achar of tendli. Waiting.

    True as you said...it is good vegetable...the ripe one I simply eat raw after washing. No need of sugar
