I really look forward to your vids, i was never taught how to cook but ive been cooking from scratch every day now for around 4 years. Your videos have taught me hiw to deviate from recipes. I love it 😊
Ahhh love it mate. Yes recipes are a great starting point but when you understand how to pull them apart it’s glorious
Just spent ages working out the cost of all the ingredients and using cheaper ham it will cost: £2.89
Flour - 100g for £0.053
1 egg for £0.17
250g chestnut mushrooms (including some for drying) for £0.89
20g oil for £0.04
50g Double cream (single cream is basically double cream and milk so double cream and milk is more price effective) for £0.24
200ml milk for £0.13
Few grinds of pepper for £0.05
2 cloves garlic for £0.08
50g cheese for £0.30
30g cream cheese for £0.12
1 lemon for £0.17
10g corn flour for £0.03
100g ham for £0.60

I'm brand new to your channel and just love it. You should change your name to the Neurodivergent Chef, btw. I assume that's not news to you. It's what makes you amazing though. I'm hugely neurodivergent myself and the things you cover and the way you cover them make perfect sense to me and answer all the questions I have had for years. I wish I had teachers like you growing up. I'd have fucking loved school.

the only thing i cook only the regular is baked coral trout, but i'm in far north queensland. with food aversions its tricky finding things i loooove to cook. texture and smells and blah blah blah. bit i really love watching people enjoy food. it helps me eat. its weird like that. it's cool seeing someone make cooking so interesting also

Bro! I am trying to convert all my classic recipes Vegan and I love fresh pasta. In your opinion what would you use to sub for the egg?
@@RadPhantoms I did a vegan pasta video with my friend Tomaso - basically just used water instead of egg. A mix of flour and semolina then oil, water and salt
you said you added a little of the pasta water to thin the sauce down. im just curious as to why the starch in the pasta water wouldnt thicken the sauce instead?
Because it’s fresh pasta it was in the water for 30 seconds so the water isn’t very starchy… if it was dry pasta then the pasta water would be way starchier. Basically was like adding salty water to thin it out.

When you think how much a ready meal costs, and it's just mostly stodgy rubbish..
But far too many people have that "I can't be bothered attitude" and buy them for convenience.. When just a bit of time and prep, you can bang out something amazing.
Yeah it’s a generational thing… much rather buy a ready meal and scroll on the phone or watch TV. Cooking used to be such a family thing for me everyone got involved
