How to Cook Adobong Puti - Traditional Adobo Version. For me, this is one of the best version of Adobo. It is a traditional dish in Pampanga, a variant of Adobo which uses salt instead of soy sauce, that's why others also call it Adobo sa Asin. We love this version, hope you'll love it too. How to Cook Adobong Puti - Traditional Adobo Version/ Adobo sa Asin
Ingredients:
1. Pork Marinade
1050 grams pork belly
1/3 cup - garlic
2 pcs - bay leaves
1 tbsp - peppercorns
1 tsp - himalayan salt or 1 tbsp regular salt
2/3 cup - vinegar
2. Chicken Liver Marinade
250 grams - chicken liver
1 tsp - fish sauce
1 tbsp - vinegar
3. simmer
***marinated pork belly
* marinated chicken liver
1/2 cup - water
4. Saute | Simmer
2 tbsp - olive oil
1/3 cup - garlic
1/2 cup - shallots
* add back pork belly + aromatics
***add back the sauce
1/2 tsp - chicken powder
2 tbsp - spicy chilis
***add chicken liver
1/2 cup - shallots
5 pcs - spicy chilis for garnish
Cooking Time: approximately 1 hour
