I think this is an excellent example of the power of kuzushi. Stop the video at 1:08 and look at Uke's feet. The throw is barely started and he is already on his toes even though he is four inches taller. The earlier he is off balance the less likely he will be able to counter. Nice demonstration

It is practiced. But also you can win in judo with a clean throw. So in competition you might not need to transition to an arm bar as the throw will be enough. If you dont score an Ippon, then transitions are super important, as you want to capitalise on the throw with a pin or submission.

Both dummys took me the best part of a year to get right? i've not been on the mat for 12 years due to work and family commitments. I am studying the syllabus again as i've forgotten most of it. I'm doing throws and ground work techniques i've never done before, so I hope to grade for my Brown belt just buy watching technique videos and practising about 10 hours a month. I'm writing down about 30/40 routines and am drilling them till i know them without thinking. I just want to prove a grappling dummy can be an advantage as they get a lot of positive and negative press? I'll let you know how I get on??
It's not difficult for a taller player to do seoi-nage, you just need to develop a good squat. If there is a really significant difference in hight, then it likely better to use seoi-otoshi. Judo is about using the right technique for the right moment.

It generally wouldn't recommend lifting throws when there is a big weight difference - but the best technique is the one you're best at.

Possibly - its very dependant on the scenario, but there is no risk free solution to self-defence type situations.

Started Judo a few months ago. Some throws look like one could easily fall on your head, a bit scary 😕
Being a good uke, having good breakfalls and training with good partners is the best way to stay safe!
It helps tucking your chin into your chest and slapping the matt when thrown to reduce chances of falling on your head

Can you throw someone heavier than you?
Yes - but if someone is much heavier, there are other options that don't involve lifting your opponent, which are usually better in that scenario.

Looks like to much pressure being placed on your back to execute such a complicated throw.
There is no pressure on the back, that's why posture is important, the lift comes from the legs.
How to give your back 101
If this was a makikoki, I'd agree with you, but nobody that is actually good at seoi is giving their back from it.
You should learn some harai-goshi and ushi-Mata instead of toshi-shaking
