ZOMBIE - adapted by SMUGGLER'S COVE (Donn the Beachcomber original)

- Donn the Beachcomber created the Zombie back in 1934. He spent months of research and dozens of bottles of rum to perfect his recipe. Imposter Zombies started appearing on menus around the US but Donn had an ingenious system to keep the ingredients a secret. It wasn't accurately replicated until Jeff "Beachbum" Berry discovered the original recipe.

INGREDIENTS
45ml Blended Aged Rum (1.5 oz)
45ml Column Still Aged Rum (1.5 oz)
30ml Black Blended Overproof Rum (1 oz)
15ml Velvet Falernum
22.5ml Fresh Lime Juice (0.75 oz)
7.5ml Grapefruit Juice (0.25 oz)
7.5ml Cinnamon Syrup (0.25 oz)
Barspoon of Grenadine
1 Dash of Angostura Bitters
1 Dash of Herbasaint (or Absinthe)
METHOD
1. Combine all ingredients into a blender
2. Add approx. 12 ounces of crushed ice and 4 large cubes
3. Blend briefly
4. Strain into your glass
5. Garnish with a mint sprig

I got the Smugglers Cove book 2 weeks ago, it really is an incredibly detailed book, 100% worth the money.
Also, props for using El Dorado rum, one of my fav brands. El Dorado 15 is to die for.

The overproof rum in the original Zombie is Lemonhart 151, which you may or may not have access to. It makes a world of a difference if you can use it.

Good one Steve! I used to pour the grenedine in after the other stuff was blended so it has a dual color appearance. Then float the high proof rum on top.

When I went to Jamaica for a mission trip, the friends I made there kept recommending that wrap and newphew overproof rum. I got one, took a shot, and grew hair on my chest haha
I *love* Zombies, but it's hard to find a bar that makes them properly and they're not friendly for someone who only drinks occasionally to make at home.
Don's original zombie calls for Don's mix witch is 2:1 ratio of yellow grapefruit juice with 2:1 cinnamon syrup (not red grapefruit). Also instead of using that crappy dull velvet falernum, make your own or use a allspice or pimento drum. Lastly plantation oftd does work a lot better for tiki style drinks. Cheers!
Thanks for the feedback, yep I should have mentioned white is the original recipe.. I do have my own falernum but that was the first bottle of John D’s I’ve acquired here in Australia.. not going to waste it!

I can’t have grapefruit juice for medical reasons. Is there a substitute I can use that won’t change the flavor too drastically?

Most things has the potential to kill you in Budapest though, don't know if it was a specific drink or everything combined but my trip there had some close calls aswell :D

My variation of the zombie is called a duppy. It uses 1oz of cross keys or mount gay, 1oz of lemon hart 151 and 1oz of Wray & nephew.
Is velvet falernum different down under? The bottle looks like it's quite a thin liquid, whereas I'm used to it as a very thick viscous syrup, like a 2/1 sugar to water kind of thickness.

The recipe calls for flash blending which is blended in a spindle blender (milkshake maker).. it doesn’t pulverise the ice, it simply agitates, dilutes and aerates it very quickly…

I made one last night with a recipe from the book Tiki- modern tropical cocktails by Shannon Mustipher. Potent but delicious.

No grapefruit juice and instead of herbastura i used pernod. Also the reciped called for Don's mix instead of cinnamon syrup. I uaed BG Reynolds.

In order to make the house made grenadine do you have to have pomegranate molasses or can that be optional in case it’s hard to find

Smugglers Cove calls for flash blending (milkshake blender with crushed ice)..
You should try an Almost Famous, Steve. Equal parts lime juice, Wray and Nephew, Yellow Chartreuse, and Aperol. It's a Naked and Famous with the Mezcal swapped for Wray and Nephew. The upshot is that you swap the smoke for the banana funk. One of my favourite cocktails.

Any suggestions for what to do if you only have some Blended Aged Rum and Bacardi Gold? Just use 60/60ml? haha
Bacardi doesn't have the right flavour profile, as it's a more neutral column stilled rum. You can use it (like always) but it will be a substantially different drink. If you've got the budget and you can visit a liquor store that stocks more appropriate rum, definitely do, but if not just make what you want with the things you have.
Rum is still rum, you put the different variations to add complexity and depth to the taste. You can put whatever you think will work for you (or whatever you have at home). Have fun experimenting with cocktails. Recipes are just guidance, you can always adjust to suit your taste.
The others are spot on.. you can use it but it will make a different drink.. you could try 60/60 and see how it goes! 😁
I’ve found that Flash blending with a drink mixer ( Hamilton beach drink master spindle ) gives a very different final drink consistency from a standard blender. “Blend briefly” = what speed and how long? Even a 5 second pulse doesn’t seem to get the same final drink as a spindle mixer. Love your channel.

Steve the Bartender 8 of us on our tropical island preferred the flash mixed over the blended Zombie unanimously. We can also attest to the wisdom of a two zombie limit. ;).

for a different kind of garnish to impress your guests - halve a passionfruit, pour a little overproof in it, light it and sprinkle cinnamon over the lit flame.

Ever since the pandemic started, I definitely look forward to making this. I used to travel to Sydney with a few of my friends for fun and we had a favourite bar that we go to for a few drinks before dinner, we ordered Zombies all the time and they were delicious! I recently bought the rums that you’ve recommended though, unfortunately getting John D. Taylor’s Velvet Falernum is really hard to get so I went with a Falernum syrup that is made by Crawly’s so it should still be fine. All I need to do is make cinnamon syrup, buy some grapefruits (what ever kind is available) and get grenadine and limes. I still have a lot of Swiss and French absinthe so it’s going to be interesting to figure out which brands I have bought works best.

Bring cinnamon sticks to a boil in Water. Add double the amount of sugar and let it sit 8-12 hours. Strain it and ure done

I got some of those glass straws after your last plug. They're awesome, they look great, they're super smooth AND they survived my first devastating drop-test (I accidentally knocked over the whole cup I was storing them in, so 4 glass straws, 4 glass skewers, and 6 steel straws all went flying together, and not a single break or scratch!)
Also, I'm not sure why Zombie recipes never called to me before, but this looks great! Gotta try it, since I have some of that Plantation overproofed.

The duppy is a variation I’ve been working on. It’s 1oz mount gay, 1oz lemon hart 151, 1oz Wray & nephew, 2oz pineapple juice, 1oz lime juice, 1/2oz of felarnum and 1/4oz of cinnamon syrup. It’s fantastic

I know you have limited rum selections available where you are, but man oh man are your rum choices here odd ones. Wray & Nephew in particular is so vastly different as a white overproof heavily funky Jamaican compared to the called-for 151 Demerara rum in this drink. In this case I'd choose Lemon Hart 151, Hamilton 151, Plantation OFTD, or even Goslings 151 in that order. I hate the Goslings but it's a better call here for this spec. I'm a big fan of unaged white Jamaican overproof rums (Bar-bar being my favorite), but it just doesn't belong here.
Literally none of those are available here in Canada.... Tiki is tough here, with the terrible selection of rums
