I understand you but it's like this. Depending on your geography, environment, and population; every animal you know is eaten. Those conditions control what people eat, consequences from political actions also makes people eat differently and everything.
The flavour profile is closer to a mix of lamb and beef but its way more tender, leaner and absorbes flavour and spices better which makes even more flavourful and delicious however nowadays we dont have it quite as often but its more of a treat a kind of like turkey or venison in the west.
just please, don't undercook it or eat it raw. Actually, don't undercook or eat raw ANY meat, unless you wanna start the next epidemic or even a pandemic.
