Pressing against a sharp edge would take a substantial amount of force to actually cut. It is sliding against the edge that produces the cut with the least force. The purpose of a ninja star is escape and evade, throwing them behind you to get away.

Wishful thinking, more obsidian uses would be so awesome though
This is unlikely, partly because obsidian in real life differs so much from obsidian in Minecraft. Minecraft's obsidian is very tough and requires a great tool to break it, where real obsidian is very brittle. I'd love throwing stars in Minecraft, but maybe copper would be a better option for them in-game. The recipe could be 5 copper ingots in a plus sign shape and could yield 4 copper throwing stars. They could be retrievable if they miss their target, like arrows, but not require a bow to shoot, and do decent but not awesome damage, perhaps equivalent to an arrow from a Power I or II bow.
