@@RankMath thanks for your reply. Thing is, these pages showing as 404 in recent audits were deleted over a year ago and haven't shown in any audits until now!! Why does that happen? They were product pages on an old WooCommerce store, all the pages have been deleted and the app uninstalled - over a year ago.

I've also looked at GSC options but they only allow for temporary, not permanent, removals. So I followed the Rank Math instructions to set up 410 redirects. These have since showed up in my audits, but at least they now say 'gone' instead of 'not found' - which feels a lot better!
