Hi futsuu03!! I have researched about your question, Shimaya has many type of Dashi power (Includes the one with no MSG), but they all got artificial ingredients. So it's different stuff to real kombu. But it works though!! Doesn't mean serious poison or anything. I understand it's hard to find kombu depending on where you are. So have a look at the ingredients list on your packet to check!!
But it doesn't have to be Japanese brand. I used Korean brand kombu before which I found in a Chinese grocery. And they worked well!! So please remember about it. It might help you !!
Chef can I ask something? Can I instead using finely chopped ginger using ginger extract? The point is to avoid small bits of ginger in the mapo tofu, or it is necessary to have chopped ginger in the dish?
