Crunchy karaage, potato salad, and seaweed soup / Deep fried chicken

  • Karaage, pasta and salad is the best combination ! It remind me my favourite bento (lunch box) store in Japan that I used to go buying lunch box there:) called Hokka hokka tei.
    ★Let’s make karaage that is crispy outside and juicy inside!
    Ingredients / 2 Servings
    (KARAAGE)
    - 450g chicken thighs (the thickness was 1 inch)
    - 2 tbsp soy sauce
    - 2 tbsp sake
    - 1 clove grated garlic
    - 1 piece grated ginger ( 20g )
    - 1.5 tsp sesame oil
    - 1 beaten egg
    - 3 tbsp flour
    - 3 tbsp potato starch
    (POTATO SALAD)
    - 1 piece mashed potato (270g)
    - 1L boiled egg
    - 1 sliced baby cucumber
    - 1/4 sliced onion
    - Salt and pepper
    - 1/2 tsp Vinegar (I used balsamic)
    - 2 tbsp~ mayonnaise ( I used Japanese quipped mayo)
    - 3 sliced ham
    - A little soy sauce
    (SEAWEED SOUP)
    - A handful of seaweed
    - A handful of green onion
    - 130g tofu
    - 1.5 tsp sesame oil
    - 500 ml water
    - 1 tsp soy sauce
    - 1.5 tsp katsuo dashi (powder)
    (PASTA)
    - 80g pasta
    - parsley for topping
    - Salt and pepper
    1. [ Marinate chicken ]
    Cut the chicken into 2 inch rough size. ( Try not to cut smaller and karaage will be juicy inside). Season with salt and pepper. Add grated garlic, ginger, soy sauce, sake and sesame oil. Mix together and rub. Let them 1 hour.( after 30min, take them out from the fridge)
    2. [ Make potato salad ]
    Boil potato at medium heat until it’s pierced with a chopstick.(about30min) Meanwhile, cut cucumbers, onion and ham. Add salt to cucumbers and onion. Then, massage well. after that, let them.(It’s gonna be water come out and become crunchy texture)
    3. [ Preparation for toppings ]
    Cut lemon, mini tomato and parsley.
    4. [ Make potato salad ]
    Peal the skins of potato and mash them. Add boiled egg and a little vinegar. Let them to cool down.
    5. [ Make seaweed soup ]
    Cut green onion and tofu. Soak the seaweed in water. Put sesame oil into fry pan and fry the seaweed and green onion. Add water, soy sauce, katsuo powder and tofu.
    Soup is done!
    6. [ Make potato salad ]
    Squeeze excess water of the cucumbers and the onion. Then, mix with the mashed potato. Add ham, a little soy sauce, salt and pepper, mayonnaise. Mix well.
    Potato salad is done!
    7. [ Make pasta ]
    Bring boiled pasta and add salt and pepper, parsley. Paste is done!
    8. [ Deep fry chicken ]
    Throw away the excess liquid of chicken marinade and add egg. Coat chicken with flour and potato starch.
    Heat the oil to 340F. ( Dip the chopsticks. When you see the bubbles come out, ready to go.)
    Gently drop the chicken and cook for about 5 min. Try not to touch first 1 min. Then check the color and turn over them. ☆After that, take chicken out of the oil one by one for a few second. So the karaage will be cool down once. It provides double fry effect which is crispy and crunchy fried! Turn the heat up to 350F last 1 min until it’s nicely golden brown. Karaage is done!
    That’s nice taste with mayonnaise and soy sauce! Nice flavor of ginger and garlic. Reason why I put pasta underneath Karaage is pasta nicely absorbed the oil from Karaage.

    I love the different cultures in cooking methods. ♥️So typical Japanese how you cut the block of Tofu in your hand. 😄
    My Spanish father chopped nearly everything in his hand when making a 🥗 salad. Onion, tomatoes, lettuce, over a salad bowl. I thought this very normal until I had a Dutch friend who saw me doing this and asked whether i had a chopping board. 😂

      My mother is from Central Americ she always cuts boiled eggs in her hand. She uses a chopping board for literally everything else but always the hand for eggs.

    I have enjoyed your husbentos and now I am finding these older videos and they are great, too. I think in the West we usually have potatoes OR pasta OR rice. Not all together. But I know this is common in Japan. It's only a very small amount of each.

    Wow this is the first time I’ve seen a potato salad made this way. Mashing the potato and egg. Usually I chop both into small pieces. I might have to try this new technique. Thanks for sharing. It’s great to learn new things from various countries around the world and to learn more about how my own culture does things since I am part Filipino, part Portuguese and part Japanese but was born and raised in Hawai’i.

    When i saw you place the chicken karaage on top of the pasta, I honestly thought rice was missing. Then suddenly rice was on the scene together with the soup it felt complete again lol

    The entire meal looks delicious and pretty simple!! I'm a vegetarian but the chicken looks super yummy and I'm sure my hubby would enjoy that very much!!! Potato salad minus the ham would be perfect for me!

    Thank you for cutting the tofu like a normal person. My white friends don’t believe that it’s the normal way to cut tofu so I’m trying to find every Asian cooking video about tofu to show them it really is because they freak out every time they see me do it lol 😂

      Not "stereotype Japanese". Traditionally tattoos are taboo in Japanese society - they are considered a mark of the criminal class or outlaws. Only quite recently it is becoming acceptable with the younger generation. They think it is cool.

      The potato is easier to peel after boiling it. Raw potato is harder to peel. Takes time with the peeler.

      @thecasualtrollingpuma I was watching a cooking show and they explained the did this because it helps the potatoes from getting dry so. That was cool to learn

      try to put the heat on low and make sure it's hot! so you have to wait for a few minutes to make the oil hot!! hope this helps :))

      Obviously, I don't know what you've done or haven't done, but if you're still learning, it's useful to do all of the steps. Start with a low heat fry to cook the meat, then take the meat out and turn up the heat in the pan until it's at the smoking point, then fry the meat a second time to crisp everything. It's best to wait 5-10 minutes between frying to let the meat rest, so it stays juicy. The second fry, you're only flash-frying the outer coating, so pull it out once it's golden brown. Hope that helps :)

      Make sure the chicken isn’t too wet before you coat it. Any moisture on the meat will steam when it hits the oil and push the coating away and make it soggy in the oil.

      I dilute honey with some rice wine vinegar and water. Or mirin if you can find it at an Asian grocery store.

      Because the pasta absorb the chicken taste and oil that’s why there are under the chicken. Too cold? I might taking too much time then >

      Some foods ARE simple, this is not the same as italian pasta (neither is it suppost to be like that in some other parts on earth which is the case here too).

      Plain rice is simple too. Sometimes a simple and plain side dish perfectly compliments a more flavorful food. It also allows you to bring in a new texture and milder complimentary taste without overpowering the flavor of the feature dish. We eat more breads where I'm from but the concept is similar...the bread side is mild flavor, filling, and brings a different texture to the meal. Thanks for sharing, this is a beautiful meal.
