quick question, i've been brewing on my chemex for a while now and all of a sudden no matter what i do my filter seals all the way around and liquid starts to come out of the spout.
You can either try to lift and turn the filter a bit in the brewer when this happens or put a chopstick or something between the spout and the filter paper. Basically this happens because there's an airlock, no air is getting into the brew chamber because of the complete seal all around. You need to have a gap over the spout to let air in.
I always brew at the same grind coarseness as a v60 - so the finer end of drip/medium. I don't agree that you need to go coarser with a chemex, the thicker paper means that you end up just getting a weaker brew in my experience. So I keep the grind the same and the brew method the same too - it just has a longer draw down time.
@HC-sb1ru Yeah grind size will alter the taste more than anything. Every time I get new beans I haven't tried before I have to make a couple batches to get the grind size right.
I’m fairly new to this. Poor over method are use a fellow set up right now not real happy with the price of their filters! Kind of a rip off in my opinion. Is there a less expensive paper available for Chemex?
No. The Chemex filters are key when using the Chemex. They filter out all the oils, sediment, and impurities by design. You're not going to get this kind of filtration with any other brand of filter. The filters pay for themselves when compared to buying coffee at a coffee shop. If you don't get how clean the coffee tastes from the Chemex method, maybe you shouldn't even use it. Don't cut corners. You'll ruin perfection.
It doesn't really help, unless it has something to compare it to that is standard size. Which again is also still too hard to show over camera. Grind setting on certain grinders is a good starting point though, but even that has some limitations on particle size difference as grinders might have different calibration even if it is the same brand. The only real way is to give micron size, but that is assuming you have methods to measure it on your end.
@@mixeddrinks8100 true, but I think viewers including myself would like to see a closeup of the grind they chose. I’ve personally been struggling with grind size for chemex and a visual would help. Especially since this is a “chemex 101” type of video where tips and tricks help. This isn’t the only video I’ve seen do something similar. Many do this where they say what it should be and don’t show it. Yes, everyone uses different grinders, but medium coarse should have similarities no matter what grinder you use. Will it be EXACTLY the same? No. Not possible.
I clean it like a bong. Just rise it. Then add some salt & pure alcohol; give it a swirl/shake until clean. Lastly I rise again with soapy water. Like brand new again.

i started at 15 and have gone up. I would never go courser than 21 tho

1 to 15 ratio would mean for every 1g coffee you have, you would use 15g of water
