Always mc chips, but one question, it’s a must to match the color of the meat with the color of wine ? I find it nice to try a white wine with beef, maybe because I am not a red wine person
Thanks for the answer, now, regarding other fast food / comfort food, since I am far away from you ( Romania ), what would you say about pairing with donner kebab or shawarma, or even traditional Romania food ( mici / smalls ), minced meat ( preferably pork and beef ) with some spices and grilled over charcoal grill, served with mustard and bread. Good episode guys, I'd love to hear more about pairing with spicy food. Once at Ho Jiak in Sydney I chose a Nebbiolo to go with my Laksa. I knew it was a bad match, but no regrets. They were both individually brilliant.

Agreed on 🍟 Not always or a must but it’s a basic lesson with red meat and red wine. Some more complex wines allow themselves more versatility

Thanks James. Carlos isn’t a huge fan of pairing spicy food as it’s such a large palate experience on its own but I can ask!
