In Southern India we have the same, except we call it Murukku, and the dough is of various kinds pressed through various kinds of mould in a compressor. Essentially, each kind of Murukku has its own specific dough recipe with different grains and spices, pressed through its specific mould, and deepfried. Its a very common snack too.

The fries themselves look incredible, my only compaint is the toppings, i personaly would toss them is some melted garlic butter and sprinkle parmesaun on them, crispy, garlicky, cheesy, perfection
