where did you get those player targets?

I got them from Rebel Sport. If you do get some yourself, just know that the player targets and poles (they attach to) are sold separately

Why did the AFL Combine stop doing these Tests? What have they replaced them with?

I'm not 100% sure on the reasoning. I did, however, find a report from 2017, indicating the clean hands test and 30m repeated sprint test were to be removed. The AFL were understanding that there was already an "...increased load on draft hopefuls in that period of the season, including the introduction of the NAB All Stars game in Grand Final week...". Therefore, removing the tests would reduce injury risk. It also mentions that more time was to be allocated toward interviews and medical screenings.
In regards to the other tests, I can only make the assumption it no longer felt necessary. Recruiters likely had enough information on players by watching in game vision to assess these attributes.

Ball sounds a little flat.
Your close kicks and hands balls need more power to get direct hits and a ball not inflated properly doesn’t transfer force as well as it could.
