I think i might know why the frostjaw gets killed like this, and its a failsafe for if something it isn't programed to handle happens, like it leaving the island. Since it cant exactly navigate onto boats or other such objects (its not programmed to get onto them if you do) it'll just "die", and since it has no boat behavior, it just becomes Jesus shark. Im assuming it cant get back onto land when it's like this, as a failsafe to prevent the frostjaw from getting off the island its spawned on.
Haha the same thing happened to me in a Wigfrid run as well! The island started breaking mid-fight and I was worried that the boat I used to row to the island will drift away and I become stranded there. When I returned, Frostjaw wasn't on the island anymore. I sailed around and found him wandering near Moon Quay, walking on water. I then tried to fight him on my boat to learn he completely destroys all structures in its way :( I then rolled back and stole a pirate boat and fought it on it. My favourite way to fight him as Wigfrid if you are going to tank like that: double commander's helm, alternate between them for animation cancelling to attack faster, bone armor in body slot to absorb some hits and preserve helmet durability. Some attacks are easier to dodge by charging behind him but for the most part I just tank a bit. Anyway when I was done fighting him it was a challenge to bring him to my boat that had fish in tin fishing bin for trading with him. He kept wandering on water in all random directions. Here's how I did it: I waited until he wandered on my boat and positioned myself so I'm near him as I row towards my boat. Then offered him a food item which wasn't ocean fish. He stands still to inspect the offering and reject it - when he is busy with that, 1 will row once or twice, then repeat the offering. I think some ocean fish meat worked well - he would not accept it, but still would stand still if offered it. Any other invalid food item should work for it as well. I ended up bringing him to my boat which was parked by Moon Quay, and traded him some heavy fish from my stash.
The opposite has happened to me before and it's horrifying... He basically pushed me right onto a breaking ice with his slide attack and I got slowly drifted away until I sunk
