Tip for anyone who wants to hide the stitching, for sensory or whatever reason: attach right side to wrong side, then flip it over to sandwich, and stitch the top. More control of the stitching, and you can catch the first stitches to assist in the lay flat look.

I'm not sure I understand what you'd describing, but flipping the point of the V in the neckband won't work well.
