I tend to only do that when I’m frying a large amount but if I’m doing a small amount, I can just roll them on the paper towels and plate them. They’re not sitting on the paper towel long enough to get soggy.

Kelly… I did keto for a number of years, fell off for some personal reasons, and am getting back onto it. While I’ve never been professionally trained, and wouldn’t say my skills are anywhere near Will’s skills, I do have a knack for being handy in the kitchen, and am really good at making keto versions of “regular” meals that are identical (if not sometimes better) to the real thing. It would be super simple to make these croquettes keto. For the potatoes you can simply makes mashed cauliflower and then just spread it onto a baking sheet and put it into a low temp oven to get some of the extra moisture out of it, so it’s dryer/thicker. Or one thing that I was told was an excellent potato replacement for keto but had never tried was daikon radish. Supposedly identical once cooked. So that’s 2 options. Then for the flour you can just use almond flour (not meal) or coconut flour, and then crushed pork rinds for the breading. Or you can even make or buy keto bread, and make your own homemade bread crumbs. I make it all sound complicated, but it’s really simple, and the results will be delicious. 👍

So in key west we can only catch horse conch, it’s a monster to clean and the edible amount of meat you get is like 10% yield. If I go back to the Bahamas though I got you!
