    Hi! I'm Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.
    On weekdays, I'm an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I'm the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.
    On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You've seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I've used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I've won over 30 Grand Championships. I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.
    I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I've answered thousands via email, so I decided to post my answers via video to reach a wider audience. I'll do my best to post a video on my channel periodically. I upload vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.

    Hey Harry, I only follow a few BBQ content creators like crazy, yourself and Mad Science. I wanted to thank you from not just myself but my family. I don’t have Treg money, or some of these other high end units. But I was able to pick up a pitboss pro series a couple years back and with tips and tricks I’ve picked up from your channel over time I’ve really dialed that baby in and have had some fantastic cooks for friends and family. Not sure you’ll catch this, but I’ve heard you say you read the comments when you can. So I just wanted to say thanks, you have elevated my game and made some fat and happy people here in KC by the things you share. Cheers to your continued success man!!

    I have this knife and it is a work horse if you use it. Ftom large tough cuts through bones to fine delicate jobs like cutting herbs it just does a nice job.

    That's why I love my big chef's knife and my favorite cleaver. If I could only have three knives it would be my bigest cleaver, my biggest chef's knife and a paring knife. No need for anything else to cook with.

    You certainly put that to the test! I have a couple of their smaller knives and have been pleased with the performance so far. I am definitely making your veggie pasta dish! Great low carb recipe👍

    I'm sorry Harry, I know handicapped by the sword, which looks awesome for what it is designed for. Spent Thanksgiving 'pit barrel style' hanging 2 turkeys on the WSM for 20 people, using a sharp 6" flexible boning knife to debone and hang, giving a 2nd knife (I always buy 2) to a friend who knows and appreciates cutlery. Turkey was great!

    I was gifted a Dalstrong for Christmas...Ive used it twice and cut myself both times.
    If i was using that 12.5" bad boy, Id only be able to order four beers now.

    Just because you can doesn’t mean you should use it for everything. I love having specific tools for the job. But one thing about this knife that pique my interest is it reminds me a lot of the Taiwanese Tuna knife. I bet it would be great for breaking down and processing large tuna.

    Im going to order me that knive. I do cut meat time to time but I love big fat watermelons in the summertime and I've been using a machete just for watermelon.

    Great video as always Harry. Looks like a great knife for cutting up that chicken. Did the weight of the knife make it cumbersome for general purposes cutting?

      I was amazed how well balanced it was to peel shallots all the way to splitting coconuts. It's really a great all purpose knife. Besides helps build biceps!

    My wife and I differ on knife shapes. She prefers the bend as your is, I prefer a straight edge more like a French Knife.

    I own about 8 Dalstrong knifes.... and honestly, not that great. Good at first,,,,, then fade fast and not great at all. Not a fan. Would not recommend

      I have the Dalstrong 9 1/2 inch Shogun chefs knife. I thought the 8 inch shogun was too rounded of a profile on the blade. Used it for a year and a half and have only honed it. The Aus10 steel is amazing. I also have the shogun slicer. Excellent knife
