I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.

      I have that a chef's and DALSTRONG Gladiator Series Fillet & Boning Knife- 6 and love em. I cut myself 70% of the time I use em though lol

      Great balance, feel, edge retention, easy to sharpen. Overall I'm very happy with them. They are priced around $100 which is much less than the $600 for Japanese knives so I don't feel so bad when I ding the edge or bump my knives when I travel on gigs

    Hi, I am perfectly satisfied with the Gladiator series for catering jobs on the road. Hardness of app 57 Rockwell is easy to maintain. And less expensive when they drop or get missing. Most important is good cleaning. With light soap and dry immediately afterwards. Dishwashers are fatal for every knife.

      The Gladiator series is a great value. I do not have to sharpen too often and there are a lot of different style knives in the series. I really like using the sandwich knife for all sandwiches. Makes PB&J a breeze to cut and make and works great slicing up a cheesesteak from the griddle.

      @@SlapYoDaddyBBQ Yep, I am satisfied with their price/quality ranging. For private use, that's another gameball. And I will definitely look into a nice set when bussiness is back to usual again. I use a Kenn Onion portable sharpener. Very handy and multiple angle. Just wished (and requested) Dalstrong to add sharpening angles to their logo stamp.

    Harry: I have a set of Dalstrong Gladiator knives. I would not recommend this series if you use a whetstone to sharpen due to the bolster blocking the full blade being sharpened. The Gladiator series is an excellent choice for everyday home use. I did purchase a separate Yaxell chef knife and it is a superb knife foe everyday use. I also put together a set of Victorinox knives with the Fibrox handles for BBQ use. The non slip handles are nice when cutting BBQ meats.

      These actually are reasonably priced for 'good quality knives'.
      For example,
      Dalstrong 10" Chef's knife = $130
      Wusthoff 10" Chef's knife = $190
      I started out with a relatively cheap set of Farberware knives - and I still use them in my kitchen for everyday knives - but when I was trimming brisket with them, I had to stop, clean and resharpen the Farberware knives about every five minutes.
      I can trim a brisket completely without the need to stop and sharpen when using a good quality knife such as these.

      Ask your local butcher what they use day in / day out. You'll be happy to follow their lead. The need a knife that cuts, can be sharpened quickly or can get the edge back with a few swipes on a steel and knives that don't break the bank. I can recommend a Boning Knife, 10 Breaking Knife and a steel. After that a Chef Knife, paring knife and a serrated bread knife and you're set for BBQ and home.

      I have been using Dexter commercial knives for decades. They are inexpensive compared to all the "show" knives you see here and elsewhere. And they are designed for commercial use, day in and day out. Carbon steel blades take and hold a razor edge.

      @@tvideo1189 I agree with you, for bangers and beaters they work. I have my meat cutting knives, still in use, from 1977 through 1981. I have my Grandfathers meat cutting knives when he butchered in 1949 to 1954. That said I do like my nice knives from Japan and Germany as well. Heck I like all quality knives. It could be said that I use beaters and bangers at competitions and the high-end stuff stays at home. The Dalstrong's are a solid segway up the the ladder to knife utopia.

      I have 66 knives including Masamotos and the Dalstrongs are well balanced, hold their edge, easy to sharpen, and a joy to use. At their price, they are a steal.

      I have $1,000 custom knives and the Dalstrongs I have which are in the $80 to $150 range compare very well in edge retention. Key is to have a good honing steel and some whetstones. I use Naniwa Chosera ones which work well to get a keen edge

    Quick question is safe to smoke chicken and brisket on the same smoker with brisket on the bottom letting the chicken drip on the brisket?

      Hey Toleto, best to not have raw meat dripping on cooked meat. If both are raw, then it's OK
