    Some folks my cringe when they see the sausage not blotted with paper towel but I agree with your method. I have been drying food for over 30 years and never blotted or hot water rinsed ground meat and never had a problem. It's always good to see how other folks do things.       Different strokes for different strokes. The wonderful thing about hiking and backpacking is there's no such thing as one right way to do things. We can all do things a little differently and still get the same result, which is to spend time outdoors and have fun. My packages of dehydrated spaghetti lasted me all season and never had a problem with any of them. They were ALL equally delicious.

      Wow that's interesting, do you have any tips for dehydrating/packaging the meats so that it doesn't go bad? I'm very new to this but it's all so fascinating.

      @@rbux1636 When drying ground beef stick with 93%, with roasts you tear it all up into strings but cut out any visible blobs of fat first, chicken is very easy as you only dry canned chicken. Dry meats at your dehydrators highest heat setting. I recently ate meals 3 plus years old that had not been stored in a freezer. All had meat. Some were a tiny bit stale but completely palatable and got us through a long month of flooding. When I have room in my freezers I store my vacuum packed meals frozen and would absolutely recommend storing your meals in such a manner. I have tried commercial meals a few times in the past few years and always return to our home dried meals. Best of luck to you!

    This looks great! I made a large dehydrator in 1976, before they were readily available. I was a nerdy teenager, and an ultralight camping enthusiast on a budget. I need to buy a dehydrator and start making good camping food like this, custom tailored to my own food preferences. I've seen others recommend dehydrating the meat separately, so it's good to see you had good luck dehydrating the entire meal, but I'm a vegan so that's a moot point to me.

      Pasta is super easy to dehydrate. With a little preparation and time, you can practically dehydrate anything.

    I just found your channel today. I've been watching The Purposeful Pantry to learn about safely dehydrating food. So excited! I also like The Backpacking Chef website. Great recipes! Weigh a serving of the spaghetti before dehydrating, then again after dehydrating. The difference is the amount of liquid needed to rehydrate.😊

    Ive been wanting a dehydrator for backpacking meals for a long time, and got a pretty nice one almost a week ago... Man, ive been missing out..! Didnt even occur to me that i would have precut vegetables that i can take just the amount i need to make a meal, with no pressure to eat the rest before it spoils... The potato slices take some time to rehydrate, but OMG, they are WAY better than regular boiled potatoes..!

    Fellow Pac NW backpacker here, PDX.
    Preparing my own dehydrated backpacking meals has been one of my passions for the last few years.
    So much fun and you can make delicious, nutritious meals for a fraction of the cost of buying them.
    My trail spaghetti is my oldest child's favorite. They will even eat it as a snack at home sometimes.
    Also, a couple of packets of Parmigiano from Costco take-out or Round Table is a nice addition.

      I love dehydrating my backpacking food when I have the time. This is one I like to do in the Spring, before backpacking season is in high gear. This way, I have all of my food options ready for whenever I'm ready to get out on trail. My house is a crazy place for a few days when I do this, but totally worth the process. I love grabbing cheese and sauce packets from anywhere I go out to eat and then save them for backpacking. Perfect size and they're FREE!! :)

      The food dehydrator was such a game changer for me earlier this year. Now I plan on making it an annual thing where I'll dehydrate a majority of my meals for the upcoming backpacking season, early in the Spring. Saves time AND money!

    I may have to make this spaghetti for dinner next week. If there is any left I may dehydrate it, lol. Also glad to see somebody else that buys the generic store brand. I love using the Kroger brand stewed tomatoes of various types to make a simple and inexpensive pasta. It seems like forever since i've done that! Time to stock back up on those things and pick up the ingredients to make your roommate's spaghetti!

    For how long can you store the dehydrated noodles for? If I was to place them in a sealed bag, would they last for a month, 6 months? Do you have to store them in a cool place, like a fridge or the pantry is fine for short term and then a fridge for long term?
    Thank you for all of your videos it has motivated me to get up and hike, enjoy the world and have a healthier life style.

      Typically if using a ziplock bag, Id recommend keeping these sealed and in a cool, dark place for up to six months. I always eat my food well before the backpacking season ends, so I'm not 100% sure how long they can actually store safe for. To increase shelf life, you can always use vacuum sealed bags and freeze them, but even then, I probably wouldn't keep these for longer than a year. Think of it as motivation to get out on trail and enjoy your meals!

      The dehydrating process really depends on the type of food dehydrator you have. I'd recommend checking the user manual and go from there, but I can't imagine there would be a huge difference in the dehydrating process.

    First off, great recipe. My son and I made this and the entire family loved it.
    Any tips if the dehydrator takes way longer than expected. Going on 20hrs.

    How much is a serving size for you? Half a tray?
    This is a FANTASTIC recipe. Spaghetti is one of my comfort foods on trail but I'm vegan and haven't found a delicious, suitable option (that isn't stupid expensive). Will try this one for sure! Thank you!!

      As long as I keep my dehydrated meals stored in a cool, dried place, they can last anywhere from 6 months to a year.

    A thought:
    The spaghetti is already dehydrated pasta. Break it into shorter pieces and add after dehydrating the meat sauce to save a step.

      That’s a great option. My preference is to dehydrate whole meals together. They tend to have more flavor that way.

      Not 100% sure what the shelf life would be for these. I'm sure if you vacuum seal these and freeze them, you could extend their shelf life. I make enough of these for the season and rarely have any leftover so I've never had to worry about the shelf life.

      For this recipe, I cook a whole box of noodles and then add them to the sauce.

      Sure, you could store any packaged dehydrated food in the fridge or freezer. Just make sure it's stored in an airtight container so that it doesn't get wet inside.

    I hope iI did not miss something but I did not find an item on how much pasta to use. I assume one 16 oz box. How would this be with round pasta to avoid sharp edges puncturing the bag?

      Looks like I left out how much pasta I used for this one! Sorry about that.
      This sauce recipe makes plenty of sauce for a whole 16 oz package. I'm sure you could use any kind of pasta you want for this one. I've only had it with traditional spaghetti noodles because I want all of the spaghetti feels on trail. :)

    Going to give this a go and it looks great. I have a question. If you use angel hair pasta or even standard spaghetti and only dehydrate the sauce, do you think the pasta would cook fine in the boiling water at camp and then you don't need to dehydrate the pasta in the sauce? I'm not sure.

      You'd have to experiment. Some people dehydrate their food items in their meals separately. For simplicity sake, I dehydrate whole meals together. This also makes the whole rehydration process much, much easier.

    So could you rehydrate using cold soaking? If so, any thought on how long would be appropriate?

      I'm sure you could rehydrate this while cold soaking. I think you could try rehydrating it in the morning and leave it in a sealed container all day while hiking. Maybe get it in the sun a bit to "heat it up." Then by the time you get to camp that evening, your meal should be rehydrated. I'd test this at home first before trying it out on trail. I test all of my new meals at home before any trip. Good luck!

      Dehydrated food can generally last anywhere from 6 months to a year, as long as they are sealed in airtight containers and stored in a cool, dry place. MREs have a longer shelf life because they've been commercially sterilized by heat in a sealed container to destroy bacteria that can make it unsafe or spoil the food.

      Good question. I don't know the exact answer to this because I tend to eat the meals I dehydrate by the end of the backpacking season. If you store the meals in a air tight container and keep them in a cool, dark place, they can probably last 6 months to a year. When you freeze them, I would imagine that would extend their "shelf" life a bit. Goof luck!

      Usually about 10 hours or so and I use parchment paper.

    I am using your recipe and it is taking SO, so long to dehydrate. I am on 24hrs and only some of it is dry. I cannot figure it out.

      Make sure the layer of food on the tray is thin and spread out. It will dry faster.

    Might be a silly question, but how long can you keep the dehydrated food for at room temperature (in a ziplock bag) before it's not considered okay to eat? I'm new to this concept. Thank you.

      Not a silly question at all. I don't have a definite answer for you, but I hear food can last anywhere from 6-8 months when stored in a Ziplock bag. I honestly eat the food I dehydrate by the end of the season so I never have to worry about needing to store it or it going bad on me. If you're looking for longer shelf life, I'd recommend using vacuum sealed bags and freezing. Hope that helps!

      The flavor changes in about three months if it is just loose in a zip lock bag that is not kept out of the light.

      I haven’t experienced any change or loss of flavor with my Ziplock bag meals yet. I also don’t store them in direct sunlight.

      Yeah this was in a work van. Not stored in direct sunlight but no measures were taken to keep it out and it was opened several times. I used to vacuum seal mine. Now I store them in a zip lock that is kept in a homemade 3mil black plastic package.

    I've watched several of your dehydrating videos and I notice you just go for it with full fat and all. I've always been told that fat should be rinsed from dehydrated meals before dehydrating because it will go rancid. Is it actually not an issue? Genuine question, not trying to call you out or anything 🙂

      I've never rinsed any of my meals before dehydrating them and I've never had an issue with any of my meals going rancid on me. The only issue I've ever had is if something didn't have a chance to dehydrate all the way and that usually happens when I put too much of the meal on one tray at a time.

I gathered from limited digging this evening that it's pretty much not an issue as long as you aren't trying to keep the food for years at a time like an emergency prepper might.

    Why boil spaghetti that's already dehydrated, just to dehydrated it again? This step seems unnecessary to me.

      Dehydrating cooked noodles helps them rehydrate much faster than non-dehydrated ones. Less cook time and less fuel.
