Probably no real reason, just a little change by the studio. Not too uncommon when a different animation studio takes over.

They've always been amber coloured. They were depicted as reddish-pink in the first few seasons for some odd reason. They made the change in the book of the atlantic, where his eyes also appear amber coloured. He's not supposed to look like a demon in his mortal form. Lol
