Please try the gravel bike with road tyres at some point, you might, like me, be amazed at how nice it is. Ok. So this summer I built a BXT gravel bike for myself. That frame is so good it deserves a video all it's own, but of much more interest here might be the groupset. I chose a Sensah SRX PRO 11 speed mechanica,l set up one by. Levers and rear mech cost me about £70 delivered. I chose these partly because having had 9 bikes now with hydraulic discs, and found them all disappointing, I wanted to try cable operated hybrid calipers. I bought the ZTTO mark 5 ones, £40 for the pair delivered. These come with sintered metal pads so take a while to bed in, but once done, outperform any hydraulic set I have ever tried. I have compressionless cables which are semi internal routing so nice gentle curves. This set up has been so good I dumped my Big 3 groupset on my road bike and bought another set for that. Never looked back....
