Indian Street Food: Onion Rava Masala Dosa & Pizza Utthappam at Sangeetha Restaurant Hounslow London

  • ✓ We were very, very lucky to be visiting Sangeetha pure vegetarian restaurant (located in Hounslow West); where Master Chef Prakash reveals some of his recipe secrets into how to make the perfect Onion Rava Masala Dosa & Pizza Uthappam.
    Rava Dosa Batter:
    * Rice flour.
    * Semolina flour.
    * Ginger.
    * Curry leaf.
    * Coriander.
    * Salt.
    * Fenugreek.
    Masala filling (lightly spiced):
    * Onion.
    * Potato.
    * Carrot.
    * Green peas.
    * Green coriander.
    Pizza Uttapam (contains rice flour, urud dal & water) it is the same batter as used for making normal Dosa's; but spread on the hot griddle a lot thicker, it's then topped with:
    * Chopped green capsicum.
    * Chopped tomato.
    * Chopped red onion.
    * Green chilli.
    * Freshly chopped green coriander.
    * Black pepper.
    * Gunpowder.
    * Vegetable oil.
    They are both served with three delicious chutneys':
    White Coconut Chutney:
    * Coconut.
    * Roasted chana.
    * Green chilli.
    * Ginger.
    Green Coriander Chutney:
    * Green coriander.
    * Roasted chana.
    * Green chilli.
    Red Tomato Chutney:
    * Onion.
    * Tomato.
    * Red chilli.
    Also served is a South Indian Sambar (spicy lentil soup):
    * Onion.
    * Tomato.
    * Tamarind.
    * Dal.

    If you sit in Sangeetha Vegetarian restaurant you'd be forgiven if you imagined or thought that it is a South Indian "Masala Dosa" "hotel" or stall (or "Lari") somewhere on the busy, bustling streets or beaches of India - astonishingly these guys were making these Indian street food favourites in the heart of "Proper London" - making them freshly cooked to order and serving them piping hot within a matter of minutes.........delicious restaurant quality food; but at affordable street food prices!!!
    Dosas are an ubiquitous and very popular food in India. The (eggless) dosa batter is made of fermented Rice, Urad Dal & Fenugreek Seeds), which is then cooked on a hot griddle (in a very similar way to a French Crepe Suzette or Galette or even a Chinese Jian Bing) until it's crispy & then filled with a delicious lightly spicy combination of Mashed Potato, Peas, Carrot & Onion.
    ...............these guys make it look very easy, but it takes many years of practice to make perfect Rava Dosas' & Utthappams' just like you see here (Chef Prakash has worked for Sangeetha restaurant for over 30 years).

      Now you know what a good cook is!
      No shortcuts were used and you will find such genuine ancient dishes in remote regions of South India or in a south Indian home.

    Most dedicated chef is seen All those years of experience...he got some time to chop all those veggies for pizza uthapam..by keeping the flame low....after pouring pizza uthapam onto the stove.. He increased the flame rate....its like he pre-meditated everything.. NOW THATS WHAT I CALL AS A TRUE INDIAN WAY COOKING.. SLOW COOKING.. AND SOOTHING TASTE TO THE BUDS

      South Indians have been civilised for a longer time than most other civilizations They have had lot of time to experiment and do trials with a variety of foods .Their ( various subtypes Tamilian, Udupi, Mysorean,Andhra )vegetarian food be it breakfast foods or lunch/ dinner foods are tasty eco friendly and healthy and one of the few cuisines conforming perfectly with today’s modern health ethical and ecological standards

    man you should have shown your face, looks like you are so kind. One of the hygienic restaurants. I make dosa and idli in my home. As I need dosa and idli everyday, I will be bankrupt if I eat in hotels.

    I've worked as a oven fan cleaner I haved cleaned over 150 restaurant here in Chicago land area. For this reason I don't eat out if you seen what behind those door you wouldn't either. This restaurant is incredibly clean. I would eat here.

    My mom used to cook the best dosa in the entire world, dosa very soft inside slight crispy outside perfectly cooked in iron tava without any oil not before, while and after cooking, just wipes the tava with a oil applied cotton cloth .
    Hotel dosa is this and house dosa is different.
    My mom's dosa just melts in the mouth with coconut, tomato or eggplant chutney

    7:53 Joined Sangeetha Restaurant in 1983, aged 51 six years ago. That means he is now 57. So 2022-57 = 1965 which is his date of birth and he joined Sangeetha in 1983 i.e at his age of 18.

    Never had this, but it looks amazing. really need to try these dishes out. the place looks amazing and the size of that hotplate. I need on of them. keep up the good work.

      In India there is no rules and regulations and no body cares and you could bribe the food inspectors . Outside India Indians are scared there restaurant might close down and have big fines so they follow the rules , so they keep it clean. The restaurant could be on local news channel also.

      Pay 500 rupees in india and u will get a princely hygiene environment.. but will you?

    To get an insight into this chef’s perfection, he flipped the rava dosa into the plate but again adjusted it at 12:01 so that it looks neat and centered!

      Every food has its own unique taste be it from TN or Delhi or mumbai.
      Dosa has its own unique taste.
      Biryani has its own
      Chicken butter masala has its own
      Chicken tikka has its own.
