Greg, can you possibly let us know how long you shut down during the stages of making this? I am thinking, do I need an hour, 2? Also, a written recipe would be lovely! Thanks for the video and for what you and your Mom do!
You can make it in any weather conditions....now that we have HVAC, which keeps humidity relatively constant inside a home. I've made it with pouring rain, no problems whatsoever.
I have used a recipe very close to this one if not spot on. I would fix it twice a year. First was as at our county fair. For eleven years I took a blue ribbon for my divinity. The second was at Christmas. My daughter is addicted to it. Thank you for reming me of those day gone. I do have a request for it this Christmas.

I always have to make a double batch (darn!) so it’s deep enough in the plan for the thermometer to work. I’ve never been able to work fast enough to get them all spooned on to a pan. I just spread it out then cut in squares. I see that a lot of commercially made is done this way. Unless I give some away, I eat it all myself. I store it in a real Tupperware container that keeps it fresh for a long time.
I make it in a pan sometimes too and cut it....I just worked fast on this one..got lucky. Usually it would be me and mom together scooping it out together.

Have you heard of a candy called seafoam....my grandfather would gather us kids in the kitchen when we visited him, and make it. I cannot remember what it tasted like or how it was made.
My mom use to make this every year... she has been gone since 07 I tried it one year before she passed and I burned up my handmixer and havent tried it since
If you use a hand mixer you have to use on low speed and it takes a lot longer....Grandma used to do it by hand with a wooden spoon...I can't even imagine.
This candy looks delicious! Dumb question from a newbie cook: why can you not make divinity when it's raining? It rains all the time here in Scotland. 😆 Is it to do with the humidity not allowing the candy to set up? 🤷♀️
I am not sure if it's an old wives tale or not, but I think if it isn't, it may be the humidity. If your in a closed house and A/C on, it should work fine. I just never tempted fate and did what grandma said...LOL
This is the first time seeing anyone make these, my mama nor Granny made it but I remember eating them at a friends house when I was a teenager…well, that’s so long ago, I don’t remember what they tasted like…it looked like marshmallow cream when you were spooning them out…they look pretty & yummy 😋
Just brings back wonderful memories and terrible memories my mother-in-law gave her me her Divinity recipe years ago before my son was born and I made it one year and brought her some and it came out perfectly she praised me all over the place for being able to make it because sometimes hers didn't come out and sometimes it did. I think she jinxed me I haven't been able to make it come out like that since. May try to get the gumption up and use your recipe Greg I like divinity it's not my favorite Christmas candy but I love to see it and love to have it around. At Macys Cellar in Milwaukee back in the 1960’s era, we bought divinity that was cherry flavored. After searching for decades, I found a recipe that used Cherry juice from a jar of Maraschino cherries. So I’ll try that and pray a lot.

Yes, I will definately make it. It is a bit like a toffee, but honey combed when it puffs up.

I was told to take out one tablespoon full of water if it is raining outside. I've seen it come out normal when raining or high humidity.

Thanks for the heads-up 😊 I don't own a "Mabel", only a hand mixer which I really don't want to burn up. 😄

It definitely has to do with the humidity. It does still work but may be sticky. It a dry climate they are dry to the touch but creamy inside.

yes, a ceramic coated cast iron pan will work. they will last about a week on the counter in a sealed container.

I tried twice to make divinity and all I ended up with was a sticky mess...so I'm watching closely to see where I went wrong.🤪
